The Secret to Fluffy Oatmeal

You’re all I ever wanted. You’re all I ever needed. Yeah. That’s what I sang the entire time I ate this oatmeal. This recipe reminds me of college when I first fell in love with oatmeal for breakfast. Banana stovetop oatmeal was my go-to because I knew it would keep me full all day and I could get so much volume out of one serving (thank you chia seeds and extra almond milk). Do you know what the secret to extra fluffy stovetop oatmeal is? Double whipping it with extra almond milk. Once you think it’s done cooking, add a little bit more milk and then keep on stirring! What you Need

This recipe calls for rolled oats as opposed to any other kind of oats (steel cut, quick cooking, etc.). Feel free to double or triple this recipe. You may need a little bit extra liquid, but other than that it should be pretty true to the recipe. Here’s what else you’ll need:
  • Rolled Oats
  • Almond milk
  • Maple syrup
  • Banana
  • Chia seeds
  • Cinnamon
  • Vanilla extract
We topped ours with some walnuts, freshly sliced banana, and some banana bread chunks. YAS PLEASE. If you’re a nut butter lover, we highly recommend almond butter for this.

Why Stovetop Oats?

Why make stovetop oats when you can just make them in the microwave? I know it takes longer to make, but once you make oats on the stove, you’re never going to use the microwave again! Ingredients 

Instructions 

  • Place all ingredients (minus 1/2 cup almond milk) into a medium sauce pan. Turn to high medium/high heat, mix, and bring to a boil.
  • Turn heat down to low/medium and simmer for about 5 minutes, stirring consistently until oatmeal thickens.
  • Add 1/2 cup more almond milk and mix again. Let simmer for 1-2 more minutes. We call this double whipped.
  • Top with walnuts, bananas, and chunks of banana bread.

*start with 2 cups and add more by the 1/4 cup.

This is my husbandโ€™s and my absolute favorite way to prepare oatmeal. Iโ€™ve made it four times already this winter and weโ€™re not regular oatmeal eaters. I like to add a pinch of salt while cooking then top it with sliced bananas, toasted walnuts, flax seeds and almond or peanut butter. Fantastic! Thank you for sharing this great recipe with us. ๐Ÿ™‚

Husband said this was restaurant-quality oatmeal – the best oatmeal he’s ever had! And I have to agree – the level of sweetness, along with the texture – A+! I also used a frozen banana & our topping was around 1/4 cup of walnuts. We really enjoyed this – will be in our regular oatmeal recipe rotation! Thank you!

This has great flavor! I used a frozen banana, so my liquid content was a little too much. When I make it again, Iโ€™d start with 1/2 cups of milk instead of 2.

So yummy! Tried to be an oatmeal fan for a while and just gave up because it never tasted good. Well then I found this recipe and Iโ€™ve been eating it almost daily! Is it crazy I like it better on the second day? Think the chia seeds thicken. Anyway, SO GOOD!

Love this recipe!!! Question though – is the serving size 1/2 of the recipe? 1/2 of cooked results? 1/2 cup? Sorry but Iโ€™m new to counting calories so Iโ€™m trying to get it right! Thanks!
