Do You Love Cookie Dough?
One of my favorite things to do as a kid was to lick the bowl after making baked goods. My mom makes this AMAZING cookie bar recipe called congo squares. They are a mixture of chocolate chip cookies and blondies in one recipe.
Let’s just say the batter is the best thing I’ve ever eaten.
More recently, I’ve been obsessed with all things peanut butter. Wahhhhh. You didn’t know that? đŸ˜› This recipe reminds me of the batter of Peanut Butter Chocolate Chip Cookies (this recipe, but with peanut butter to be exact).
The beautiful thing about these peanut butter overnight oats is that there are no eggs in this recipe! You can feel free to lick the bowl without fear.
Why Overnight Oats?

The main reason we love overnight oat is that they are delicious and perfect for meal prep. We like to make a big batch of overnight oats at the beginning of the week and eat them all week long.
These Overnight Oats Are:
- Thick
- Peanut buttery
- Packed with protein (thank you peanut flour!)
- Lower in fat (thank you peanut flour, again!)
- HEALTHY
Because there wasn’t enough peanut buttery taste already, I topped mine with some real, all-natural peanut butter that I got from Costco last week. Don’t even let me start with Costco. #truelove

Peanut Butter Cookie Dough Overnight Oats
Ingredients
- 1 cup rolled oats
- 1 teaspoon vanilla extract
- 1/4 cup peanut flour
- 1/4 cup plain Greek yogurt
- 1 cup unsweetened, plain almond milk
- 1 tablespoon honey or maple syrup*
- 2 tablespoons chocolate chips, semi-sweet
Instructions
- Place all ingredients (minus the chocolate chips) in a medium size tupperware and mix.
- Then, place into fridge for 2 hours or overnight.
- In the morning, add a few more tablespoons of almond milk (if need be <— depending on how thick you like it!) along with the chocolate chips.
- Eat with a drizzle of peanut butter on top.
Tips & Notes
- Feel free to use any sweetener you would like.

23G of sugar?! That’s more than you should have in an entire day in one meal! Love the idea of this but way too much sugar for me.
Try this.unsweetened almond milk, plain Greek yogurt and instead of chocolate add raisins. Adjust how sweet you like it with more or less honey or maple syrup. Should cut down on the total sugar.
The recommended guideline is 24g of ADDED sugar per day, not naturally occurring sugar. So eliminate any of the sugar from the Greek yogurt & oats in your calculations. You cooked always replace the honey/maple syrup with an overripe banana or stevia/monk fruit, etc.
My brother and I were also born on the same day but we are exactly a year apart. We were born on Nov 18. We have a sister that was born in Oct and one in Jan so we counted back and figured our parents were either celebrating Valentines Day or their anniversary which is Feb 15. Wonder what your parents were celebrating? LOL

My brother & sister have the same birthday (6 years apart) and my Dad’s is the next day.
My girls are 10 years apart but were both born on the 28th of a month (August & April). There was 4 minutes difference between the time of day they were each born, and gross but true, their placentas were delivered at the exact same time of day. Weird!

This looks delicious but i have an almond allergy, can i use regular milk as a substitute (i also have a soy allergy so soy milk is out)

I can’t find peanut flour, can I use almond flour? If I sub peanut butter how much should I use?
Hmmmmmm. Peanut flour and almond flour are very different. Peanut flour is actually defatted peanuts and then ground into a flour where as almond flour is actually just ground almonds! Did you check amazon? That’s where I get mine! It’s also readily available at the store from a product called PB2. If you use peanut butter, I would use about a tablespoon per serving…so a total of 2 tablespoons!

Just found your site and LOVE these recipes! April 17th does rule – its my son’s birthday. He and my younger son are exactly 4 years and one week apart. Question – could I substitute something like Quest peanut butter protein powder for the peanut flour – would it end up with a similar texture or would I also need to add chia? Thanks!!
