We have hosted an event or two in our time and we have learned one main thing: presentation is everything! It doesn’t matter what you serve, how much it costs, or how much time you put into it. Always serve your guests the most quality ingredients as you can find, but if you buy a veggie plate at Target, put it on a white serving platter with a cute little serving dish with dip and you’re golden!

Same goes for drinks! If you are hosting a party, get out your best glassware and serve a simple chilled white wine or some fun bubbly water with fruit garnish to really elevate it with little to no effort!

What You Need for this Raspberry Cocktail

This ginger raspberry mojito is a fun twist on the classic mojito! It has fresh lime juice, grated ginger, white rum, club soda, pureed raspberries, and fresh mint leaves!

  • Fresh raspberries
  • Lime juice
  • Fresh ginger
  • Light rum
  • Club soda
  • Fresh mint
  • Honey

Frozen vs. Fresh Berries

Though fresh berries would be best for this cocktail, frozen berries would work too! All you have to do is remove the frozen raspberries from the freezer, let them thaw and then strain the access water from them before placing them in the blender!

Can you use dark rum instead?

Is there a difference between white rum and dark rum? The difference between white rum and dark rum is that dark rum is aged longer and usually in wooden barrels. You can use both in this recipe, but know that the dark rum is usually bolder in flavor!

All About the Ginger Honey Simple Syrup

We love naturally sweetening our cocktails and drinks with our honey simple syrup. It is super easy to make!

You bring 1 cup honey and 1 cup water to a boil and then let it simmer for about 10 minutes. That’s it! You let it cool and store it in your fridge for 2-3 weeks!

For this ginger raspberry mojito, you just add ginger to the pot when you boil the water and honey together. After you have let it simmer, run the simple syrup through a sieve so the ginger pieces are left behind and you’re all set!

Ingredients 

Honey Ginger Simple Syrup

  • 1/2 cup honey
  • 1/2 cup water
  • 1 tablespoon freshly minced ginger, peelded

Raspberry Ginger Mojitos

  • 6 oz. carton of Raspberries
  • 2 oz. lime juice, ~1/4 cup
  • 1 inch fresh, peeled ginger
  • 6 oz. white rum, ~3/4 cup
  • 6 oz. club soda, ~3/4 cup
  • 12 mint leaves
  • ice

Instructions 

  • First, prepare honey ginger simple syrup by combining honey, water, and minced ginger into a small sauce pan. Bring contents to a boil, stirring often. Then, reduce to low and let simmer for 10 minutes. Strain and then place in refrigerator to cool.
  • Add 6 oz. fresh raspberries, 1/4 cup of lime juice, and 1 inch of freshly peeled ginger into a food processor or high-speed blender. Blend until pureed.
  • Optionally use a sieve and spatula to remove seeds and any other chunks from the puree*.
  • Slap 3 mint leaves to release flavor and place them into a cocktail shaker filled with ice. We used this cocktail shaker mason jar attachment and it worked great! Then add 2 tablespoons of raspberry puree, 1.5 oz. honey ginger simple syrup, 1.5 oz. white rum, and a handful of ice. Gently shake until combined.
  • Pour over a glass of ice and then add 1.5 oz. of club soda. Repeat 3 more times.
  • Serve with a lime wedge and fresh raspberries.

Tips & Notes

  • Sieve: we’ve made this recipe both ways and actually don’t mind the drink with no sieve!
