Sometimes I feel bad for lunch. I feel like it takes a backseat to breakfast and dinner when it comes to people’s favorite meal or when it’s time to meal prep for the week. It is true that you can meal prep lunch by eating leftovers from dinner, but (in my opinion) I love having lighter lunches compared to dinner. It is true that starting off the day with a healthy breakfast is important and preparing dinner for yourself or the family in the evening is important, I would argue that lunch is almost more important! Lunch is created to keep you going for the rest of the day. If you eat a heavy lunch you are ready for a nap, but if you eat a light and easy lunch that is packed with veggies and protein, it can be a breath of fresh air for the rest of the day. I love meal prepping a quinoa salad at the beginning of the week. I will choose different things to serve it with every lunch (chips + salsa, cheese + crackers, etc.) just to make sure that lunch stays exciting. This turkey pinwheel roll up is also a great recipe to prep at the beginning of the week, too! Just in case you need to whip up a meal really fast, at least you know you will have a meal that is made with whole and healthy ingredients. Here is a list of some of our favorite quality ingredient pantry staples. Whole grain tortillas – keep these in the refrigerator so they last longer. It’s easy to make a veggie roll up or a breakfast quesadilla in no time! Sun-dried tomato paste– adding a little sun-dried tomato paste to a sandwich, wrap, or even on some eggs in the morning gives any meal a burst of flavor! Quinoa- One of my all time favorite meal prep tricks is to have a container of cooked quinoa in the refrigerator to make any meal a breeze. Just add greens, a dressing, or you can even whip up a quinoa veggie burger in no time! Balsamic vinegar– Create a pasta sauce or drizzle some greens with balsamic for an easy flavor add to any meal! Pinwheel recipes are a great lunch option. They really bring me back to my childhood! It was always so fun to choose our own adventure and make pinwheels with whatever we wanted! If you have kids, setting up a buffet style pinwheel set up is a fun way to involve your kids in making healthy food choices! And? They get to have a say in what goes in their lunch! These turkey roll ups are super simple to make! We used sun-dried tomato paste (that we had in the pantry) to give this roll up amazing flavor. No need for sugar-filled dressings or spreads. If you would like another option for the spread, try this healthy hummus as your spread! After you add your spread to a whole grain tortilla, add the basil, spinach, cheese, and turkey! Tightly roll the turkey roll up so everything is compact. It is much easier to cut the roll up into pinwheels if everything is tightly rolled together. Once everything is rolled, use a sharp knife to cut the pinwheels. Stick a toothpick in each pinwheel to hold the pinwheel together. Immediately eat your turkey roll ups or place them in a meal prep container along with veggies, chips, or your favorite fruit for a well-balanced lunch all week!Healthy Lunch Ideas
Easy Turkey Roll Ups
Ingredients
- 4 fresh basil leaves
- 2 tablespoons sun-dried tomato paste
- 1/2 cup spinach, not packed
- 2 oz. sliced provolone cheese
- 4 oz. sliced turkey turkey
- 1 large tortilla, I used a whole wheat/spinach blend
Instructions
- First, spread 2 tablespoons of sun-dried tomato paste on your tortilla.
- Top tomato paste with turkey slices and cheese. Finally add on fresh spinach and basil leaves.
- Roll the tortilla tightly so that all ingredients stay wrapped up in the tortilla.
- Use a sharp knife to slice the roll up into pinwheels.
- Stick a toothpick in each pinwheel to hold it together.
- Serve immediately or place into a meal prep container for lunch throughout the week.
