Peanut Butter Banana Overnight Oats

If I had to choose one overnight oats flavor to eat for the rest of my life, it would hands down be this peanut butter banana variation. I can’t even count the amount of times I’ve made them and the same goes for lots of you. I love eating them with a giant scoop of peanut butter on top with some sliced bananas. And, more recently, I’ve been adding a scoop of protein powder!

You are absolutely going to love this creamy overnight oats recipe. It’s sweetened with mashed banana and honey and made thick and creamy with Greek yogurt and peanut butter. Enjoy!
- Rolled Oats (you can sub quick cooking, but we prefer the texture of rolled)
- Creamy Peanut Butter
- Banana
- Unsweetened Almond Milk
- Greek Yogurt
- Honey
- Chia Seeds
- Cinnamon
- Vanilla
Variations for PB Banana Overnight Oats
- Add protein: If you’re hoping to fit more protein into your diet, go ahead and try adding around 2 tablespoons of your favorite protein powder or collagen.
- Use a different sweetener: feel free to swap the honey for maple syrup, agave, or even brown sugar.
- Swap the peanut butter: if you can’t do peanut butter, any kind of nut butter works. Try almond butter or cashew butter!
Topping Ideas
Don’t forget the toppings…it’s the best part! We went with more sliced bananas, a dollop of creamy peanut butter, and some chopped peanuts. Here are other ideas:
- Berries
- chocolate chips
- Fresh lemon zest
- Almond milk
- Dried cranberries
How long do PB Banana Overnight Oats last in the fridge?
Store leftover peanut butter banana overnight oats in an airtight container in the fridge for up to 3. We recommend on adding your toppings fresh right before serving.
Peanut Butter Banana Overnight Oats
Ingredients
Wet
- 1/2 medium banana, mashed
- 2 tablespoons peanut butter, creamy
- 1/4 cup nonfat, plain Greek yogurt, plain
- 3/4 cup almond milk, unsweetened
- 1 tablespoon honey
- 1 teaspoon vanilla extract
Dry
- 1 cup rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon cinnamon
Instructions
- First, mash 1/2 banana in a large bowl. Then add the rest of the wet ingredients and mix until smooth.
- Add in dry ingredients and mix again.
- Place in the refrigerator, covered, for at least 2 hours or overnight. Serve cold.
Tips & Notes
- Feel free to double this recipe.
- It should stay good refrigerated for up to 3-4 days.
- Depending on how thick you like your overnight oats, you may add a splash of almond milk before serving.
- Nutrition facts are without the toppings.
