Chia Yogurt Power Bowl + Bootcamp WOD

This past Saturday morning a few twin cities bloggers got together for a brunch n bootcamp! Amanda from Semi Healthy Blog and I organized it. We had the event at her apartment complex across town (in the middle of a winter wonderland snow storm).

Today’s easy recipe was actually inspired by Melissa from A Fit n’ Spicy Life. She brought the most delicious Chia Yogurt Parfait to share…So I can’t take 100% credit for this masterpiece.

I changed my recipe a little, but it’s pretty much the same thing as Melissa’s :). #puregenius

As part of this little get together, we did a 45 minute workout…designed by yours truly! We had a pretty big-sized space to work with, but no equipment. For this WOD all you need is a timer, some water, and a space where you have room to jump around.

We started off with the main circuit. There were 7 different exercises that we did for 45 seconds each with a 15 second break in between. Repeat 3 times. Then we moved onto 3 different tabatas: Upper Body – Full Body Plyo- and Core. All together it took about 40-45 minutes to complete!

After the sweat sesh we dove into our delicious brunch! We all brought different things to share. Here’s a photo of the 4 of us.

I picked up some Seven Sunday’s Muesli from the SS headquarters so we could have some fuel for post workout. I also stopped and grabbed some Caribou. Amanda made the most BA waffles, Alex brought juice and yogurt, and Melissa was in charge of the chia Greek yogurt parfait! NOM NOM NOM

So, yesterday I recreated Melissa’s parfait. Instead of using almond milk…I used kefir, so it had a zing to it…and active cultures!

Chia Yogurt Power Bowl

Ingredients

  • -1 medium size container of Fage Greek Yogurt 0% or about 2 cups
  • -1/2 cup of kefir (any flavor..I used strawberry. You could also sub almond milk)
  • -1 tablespoon honey
  • -1/4 cup chia seeds
  • -Toppings: puffed cereal, sliced bananas, blackberries, walnuts, and more honey

Instructions

  1. In a large tupperware, mix together Greek yogurt, kefir, honey, and chia seeds. Let sit in the refrigerator for about 30 minutes, so that the chia seeds expand. Then, create you parfait by adding whatever toppings you desire! Store in an air-tight container in your refrigerator.

So easy to make and so delicious! Melissa was telling us that she makes this on Sunday and portions it out into little tupperware containers, so that she has it for throughout the week! Love meal prep.

I will definetly be trying this one, how many servings would you say the recipe above yields?
(two as the photo would suggest?)

The workout followed by brunch sounds like such a fun way to do a bloggy meet-up!!!
The bootcamp WOD looks awesome and I will definitely try it!

Wow, this recipe looks so delicious! I love the idea of using kefir instead of milk, it’s a nice way to give the dish a little tang. I might try making this recipe with oats the night before as an overnight oats dish, it’d be perfect for right after a tough workout! Thanks for sharing!

I just tried this workout without stopping between sets at all, and I’m tired. I messed up on the burpees/jump lunges and thought I didn’t do enough of them, but ended up doing an extra 4 minutes in the end! I guess I’ll call that a finisher!

This looks to good to be true! I have been looking for a puffed cereal to add crunch to my morning oatmeal and yogurt bowls, what was used for this recipe?
