Looking for a healthy snack or fruity dessert? Make this creamy blueberry chia seed pudding; it’s heart healthy and packed with fiber!
Hi friends! Long time no chat. It’s been a whirlwind of a couple of days since getting home from Mexico. If you saw any of my social media posts, you know that I have a broken foot and have finally just recovered from the Mexican Flu (it’s what we’re calling it). Be on the look out for a post or two later this week on an update on how I’m doing!
For now- we need to goo and gaa over this AMAZING CHIA SEED PUDDING.
Chia seed pudding is definitely my new favorite dessert. I like it because I can also eat it as a snack and not feel bad 🙂 We posted FFF’s first chia seed pudding recipe a few weeks ago and I just can’t believe I waited so long to share the goodness. Lin has been raving about the fact that chia pudding is her go to dessert since I can remember and I JUST TRIED IT a few months ago. I know, I know…late to the game.
This recipe is in partnership with my favorite spice brand – Simply Organic. Dat vanilla, though. This recipe is made with just a few simple ingredients. Let’s take a look:
Smashing the blueberries is definitely key! 1. you want to make sure you get all that delicious blueberry flavor and 2. it turns your chia pudding a slight blue/purple color and that’s just fun! The lemon juice and vanilla extract also help bring out the blueberry flavor, so don’t skimp on either of those!
Make sure you let the chia seeds soak for a good 6 hours. You’ll be surprised as to how much they do expand and how think your pudding will be!

Creamy Blueberry Chia Seed Pudding
- Prep Time: 10 mins
- Total Time: 10 mins
- Yield: 2
- 3/4 cup fresh blueberries
- 1/4 cup chia seeds
- 1/2 cup vanilla Greek yogurt
- 1 cup almond milk, unsweetened
- 1 teaspoon Simply Organic Vanilla Extract
- 2 tablespoons honey
- squeeze of lemon juice (~teaspoon)
- Place blueberries in a medium-size bowl and use a fork to mash. Add in the rest of the ingredients and mix until combined.
- Place bowl in the refrigerator for at least 6 hours. Stir every few hours.
- Serve with fresh berries and lemon zest!
Feel free to get crazy with how you serve this! Layer it with Greek yogurt, muesli, granola, fresh fruit, nut butter, seeds, nuts, ETC. The list goes on and on and on!
