We took traditional nachos and replaced the fried tortilla chips with roasted sweet potatoes for an equally as delicious (if not better) substitution! These are super easy to make and totally customizable to your liking. Perfect as a healthy appetizer or quick dinner!

What’s In Loaded Sweet Potato Nachos?

We cut our sweet potatoes into rounds for our nacho base. Then, they’re seasoned with olive oil, garlic powder, cumin, chili powder, and salt and pepper. 

As for toppings, we chose cheddar jack cheese, black beans, sweet corn, homemade guacamole, salsa, plain Greek yogurt instead of sour cream, and fresh cilantro.

Can I use a different kind of potato?

Absolutely! We chose sweet potatoes because we LOVE them, but if you prefer another type of potato, go for it! Yellow potatoes or red potatoes would be great options! You can play around with the toppings too if you switch the potatoes. For example, you may want to go with sour cream, cheddar cheese, bacon bits, and chives for regular potatoes. 

Sweet Potato Nachos Additions

You don’t have to stick with the toppings we chose, especially if you have picky eaters. Play around with your favorite toppings and have some fun with it! For example, you could use pepper jack cheese instead of cheddar jack if you like. Some other fun toppings are avocado crema, pico de Gallo, refried beans, fresh corn salsa, chopped bell pepper, or red onion. 

If you want to add a boost of protein, add some ground turkey, rotisserie chicken, or crock pot shredded chicken

Can I make these nachos in the air fryer?

Absolutely! You can roast the sweet potato slices in a single layer in the air fryer at 350 degrees for 15 minutes, flipping halfway through. Or, you can make air fryer sweet potato chips

even thickness

Make sure to slice your sweet potatoes to an even thickness so that they bake evenly. 

Storage

Should you have leftovers, pop them in an airtight container in the fridge for around 5 days. 

Serving Suggestions

​You can eat these delicious nachos on their own or pair them with some delicious sides! For a boost of protein, add a southwest chicken salad. If you want to dip your sweet potato nachos, add some Mexican black bean hummus or vegan street corn queso dip to the side!

Ingredients 

For the Sweet Potato Rounds

Toppings

  • 1/2 cup cheddar jack cheese
  • 1/4 cup black beans
  • 1/4 cup sweet corn
  • 1/4 cup guacamole
  • 1/4 cup salsa
  • 1/4 cup plain Greek yogurt
  • sprinkle of cilantro

Instructions 

For the Sweet Potato Rounds

  • First, Preheat oven to 375ºF.
  • Then, slice 1 large sweet potato into thin rounds and place on a baking sheet. Drizzle with olive oil and season with garlic powder, cumin, chili powder, and salt and pepper.
  • Bake at 400ºF for about 20 minutes.
  • Once sweet potatoes are cooked, top with cheese.* Then place back in the oven for 2 more minutes to melt the cheese.
  • Top with corn, black beans, guacamole, salsa, plain Greek yogurt, and cilantro.
  • ENJOY!

Tips & Notes

  • If you want the beans and corn to be warmed up with the cheese, add to step four in addition to the cheese.
