This overnight oatmeal recipe only requires 5 simple and wholesome ingredients to make. It’s a healthy, make-ahead breakfast that will have you full all morning long.

We made coconut curry for dinner last night, and we had a partially used can of coconut milk. Wasting coconut milk is the worst, so we decided to make a batch of overnight oats.

I remembered absolutely loving a coconut latte at Starbucks, so decided to add in a little bit of cold brew concentrate as well. It was one of the best breakfasts I ever had. It was sweet, had great flavor, and I got a little bit of a caffeine kick, too! 

These creamy overnight oats may be meal prep, but it’s SUPER easy. Just dump all your ingredients in an airtight container, give it a good stir, then cover and let it sit overnight. The next day, all you have to do is add your toppings and DEVOUR.

What’s in Coconut Latte Overnight Oats?

  • Rolled oats: Also known as old-fashioned oats, this type of oats are best for overnight oats as they have a chewier texture.
  • Lite coconut milk: We used light coconut milk for a lighter and healthier version that still tastes nice and creamy.
  • Brewed coffee: Coffee gives this oat recipe a lovely coffee flavor and an extra energy boost.
  • Maple syrup: For some natural sweetness, we used maple syrup. You can also use honey.
  • Ground cinnamon: This spice adds a little warmth and depth of flavor to the oats.

Easy Swaps & Additions

You could easily use this recipe as a blueprint for any flavor of overnight oats. Below are some simple swaps and additions you could try:

Give it a protein boost: Mix in some protein powder or nut butter like almond butter or peanut butter for some extra protein.

Add more fiber: Chia seeds, flaxseeds, or hemp seeds are great sources of fiber and can be added to the oats for some extra nutritional benefits.

Change up the milk: Use full fat coconut milk instead of lite coconut milk for a richer and creamier flavor. You could also use almond milk, oat milk, or any other plant-based milk of your choice.

Topping ideas: Some of our favorite toppings for overnight oats include fresh fruit, cacao nibs, coconut flakes, and chopped nuts. Get creative and add your own favorite toppings!

How to Store

Overnight oats are best stored in an airtight container in the refrigerator for up to 3-4 days. You can make multiple servings at once to have breakfast ready for the whole week, making your mornings easier and more delicious!

  • Place all ingredients into a medium-sized glass tupperware and mix.
  • Cover and transfer the tupperware into the fridge for at least 2 hours or overnight.
  • Top with more coconut cream, shredded toasted coconut, and cinnamon. Enjoy!

  • Make them blended overnight oats: add everything into a high-speed blender and blend for about 1 minute until smooth. Then transfer into a container to chill in the fridge overnight.

Depression is so terrible but I'm happy I went through it because it's showed me how wonderful life really is. Life that would be even more wonderful with dis recipe in my fridge.

Seriously need to get some oats back in my pantry – I have so many recipes to try!
And I’m glad you are honest when it comes to your blog…I have depression and anxiety, and have been able to managed it with therapy in the past and on my own (as of now). I had a great therapist that helped me figure out how to manage it on my own – which has been great! Mine runs in the family as well, so it was bound to happen!

Your oat game is just so on point. Lattes are my favorite treat – soy, almond or coconut milk are all fantastic. I love using FULL FAT coconut milk with my morning coffee and blending it in my nutribullet. It gives it a latte texture/taste. So lovely.

I’m the same way with my own depression, I acknowledge it, work with it but don’t let it define me. The more open I am the better I can cope. Thanks for being such an inspiration <3

I’m OBSESSED with coconut milk. I limit the amount of dairy in my diet so coconut milk has been my savior when I want to make something creamy and delicious. I was so disappointed when I found out the brand of coco milk that Starbucks is using. Guess I’ll just have to stick to taking my decaf coffee black or occasionally treating myself to some full fat cow’s milk.

Also, it’s really awesome that you’re opening up to your readers about yourself and some of the challenges that shape your life. Your openness is really inspiring!
