This overnight oatmeal recipe only requires 5 simple and wholesome ingredients to make. It’s a healthy, make-ahead breakfast that will have you full all morning long.

We made coconut curry for dinner last night, and we had a partially used can of coconut milk. Wasting coconut milk is the worst, so we decided to make a batch of overnight oats.

I remembered absolutely loving a coconut latte at Starbucks, so decided to add in a little bit of cold brew concentrate as well. It was one of the best breakfasts I ever had. It was sweet, had great flavor, and I got a little bit of a caffeine kick, too! 

These creamy overnight oats may be meal prep, but it’s SUPER easy. Just dump all your ingredients in an airtight container, give it a good stir, then cover and let it sit overnight. The next day, all you have to do is add your toppings and DEVOUR.

What’s in Coconut Latte Overnight Oats?

  • Rolled oats: Also known as old-fashioned oats, this type of oats are best for overnight oats as they have a chewier texture.
  • Lite coconut milk: We used light coconut milk for a lighter and healthier version that still tastes nice and creamy.
  • Brewed coffee: Coffee gives this oat recipe a lovely coffee flavor and an extra energy boost.
  • Maple syrup: For some natural sweetness, we used maple syrup. You can also use honey.
  • Ground cinnamon: This spice adds a little warmth and depth of flavor to the oats.

Easy Swaps & Additions

You could easily use this recipe as a blueprint for any flavor of overnight oats. Below are some simple swaps and additions you could try:

Give it a protein boost: Mix in some protein powder or nut butter like almond butter or peanut butter for some extra protein.

Add more fiber: Chia seeds, flaxseeds, or hemp seeds are great sources of fiber and can be added to the oats for some extra nutritional benefits.

Change up the milk: Use full fat coconut milk instead of lite coconut milk for a richer and creamier flavor. You could also use almond milk, oat milk, or any other plant-based milk of your choice.

  • Place all ingredients into a medium-sized glass tupperware and mix.
  • Cover and transfer the tupperware into the fridge for at least 2 hours or overnight.
  • Top with more coconut cream, shredded toasted coconut, and cinnamon. Enjoy!

  • Make them blended overnight oats: add everything into a high-speed blender and blend for about 1 minute until smooth. Then transfer into a container to chill in the fridge overnight.

When you say โ€œlite coconut milkโ€, is that the stuff in the can or coconut milk in a cardboard container in the refrigerated section?

I’m so sorry for the dumb question but what do you mean by the “+ 1 T” in the ingredients ?

Exemple : “ยผ cup + 1T brewed coffee”. Do I add one Teaspoon ?? What is 1 T

Ingredients
1 cup rolled oats
ยผ cup coconut water*
ยผ cup + 1T brewed coffee
ยผ cup + 1 T almond milk (I used Almond Breeze 60 calorie)
1 tablespoon maple syrup or honey**
1 tablespoon coconut cream*
dash of cinnamon

Lee, I’ve not been following the week of overnight oats because I’m not a big breakfast person, but the coconut and latte got me. It sounds delicious and I might actually try this! Also, thank you for sharing that you also suffer from depression. I do as well and try very hard to keep upbeat. Honestly, some of the most upbeat people you know suffer(ed) from depression (ie Robin Williams). We do our best to keep thinks light and keep moving forward. It helps us to get through another day.
