Strawberry Spinach Salad – It’s the Perfect Salad

Do you know those recipes that bring you back in time? This strawberry spinach salad takes me back to high school when I would spend all day every day at our neighbor’s house. Their mom would buy the most amazing poppyseed dressing and it felt like there was always a huge bowl of a berry salad in their fridge and it was a free for all!

As an adult, I have found that my pallet for salads has changed just a little bit. I know need a balance of sweet and savory, as well as a good mixture of texture in every salad I eat. We have so many delicious salad recipes on FFF and we try to use a combination of sweet and savory in all of them!

Though the strawberries and poppyseed dressing are absolutely the stars of this salad, I can’t get over how amazing the candied almonds are. We were inspired by our Oil Free Maple Roasted Pecans and decided candied almonds would be a great addition. We were right, you won’t be able to get enough!

Strawberry Spinach Salad Ingredients

If you are planning on having a salad for a full meal, it is important to pack it with nutritious ingredients that will keep you going all day and night! We chose all of the ingredients for this salad because they go well together and they all offer different nutritious aspects to the salad.

Spinach- Spinach is the leafy greens of leafy greens! It is great with almost any dressing and you can eat it cold or hot. Spinach is packed with iron, vitamin b, calcium, iron, and folic acid. You get a lot of bang for your buck with any spinach salad you choose.

Fresh Strawberries- Not only are strawberries absolutely sweet and delicious, but they also offer a lot of nutritional value to any meal. Strawberries are rich in vitamins c and k! They are also a great source of folic acid, folic acid, and potassium! Feel free to up to strawberries in this strawberry spinach salad or chop them differently. We decided to leave bigger chunks of strawberries in the salad, but bite-sized pieces would be delicious.

Red Onion- Oh, the red onion. We always get so much push back when we include raw red onions into our salad. If you are not a raw onion person, check out our how to make caramelized onions post and use those instead! Raw red onion offer a delicious crunch and flavor to any salad, as well as other nutritious qualities! Red onions have a compound called organosulfur, which is a strong antioxidant! You get antioxidants, vitamin c, and potassium for the thin slivers of red onions. You just can’t beat em!

Poppyseed Dressing- Don’t be afraid, making homemade poppyseed dressing is SO easy. Check out our homemade poppyseed dressing for details! We use a combination of greek yogurt, lemon juice, poppy seeds, and vinegar for a tasty and delicious dressing. Poppy seeds are known to support digestion and are packed with antioxidants! #winwin

How to Make Candied Almonds- You’re not going to believe how easy it is to make candied almonds. All we had to do was grease our baking sheet and toss slivered almonds with maple syrup and a pinch of salt together. Then, we laid them on a baking sheet and BOOM. Delicious candied almonds. They are sweet, salty, crunchy, and addicting! you are going to lose your mind! Almonds offer a healthy dose of fiber and protein to this strawberry spinach salad!

Ingredients

Candied Slivered Almonds

  • 1 cup raw slivered almonds
  • 1/2 tablespoon maple syrup
  • pinch of salt

Strawberry Spinach Salad

  • 5 oz. fresh spinach
  • 1 lb. fresh strawberries, sliced
  • 1/2 cup feta crumbles
  • 1/4 medium red onion, sliced

Poppy Seed Dressing

Instructions

Candied Slivered Almonds

  1. First, spray a baking sheet with nonstick cooking spray. Then, lay slivered almonds down on the baking sheet and drizzle with maple syrup and season with a pinch of salt. Bake at 400ºF for 8 minutes.

Strawberry Spinach Salad

  1. Evenly distribute spinach, strawberry slices, feta, red onion, and almonds into four bowls or meal prep containers.
  2. Drizzle two tablespoons of poppyseed dressing over every bowl and enjoy!
