Oh heyyyy there coconut rice. I am so glad we finally perfected you. For some reason this coconut rice recipe took try after try after try to get the rice to liquid ratio perfected as well as the cook time.
Over the last year, we’ve really started to explore what our Instant Pot can do for us. From pulled meat in minutes to potato salad to 10-minute steel cut oats, the Instant Pot is now a part of our regular cooking routine.
One thing that we always look to do when testing our Instant Pot recipes is a quick release. We know that you guys (and us) appreciate a quick meal and manual release seems to add 15 minutes to every Instant Pot recipe.
Most Instant Pot rice recipes call for a manual release and this is something we consciously tried to work around for this recipe. What can we do to avoid this? The answer? A little bit more liquid and a little bit longer cook time.
I think I made this recipe sound more complicated than it is, because it’s actually rather simple. You legit just throw all of the ingredients into your Instant Pot and turn it to manual high for 8 minutes. Yeehaw <— that’s my latest saying.
Instant Pot Coconut Rice Ingredients
So what do you need to make this Instant Pot Coconut Rice recipe?
- long-grain white rice
- lite coconut milk
- water
- honey
Yup, that’s 4 ingredients. I want to note that we have only tested this coconut rice recipe with long-grain white rice and not with any other kind of rice such as brown or short-grain brown rice.
We did, however, test it with full-fat coconut milk too! I’d say that it comes out a little bit more creamy with the full-fat coconut milk, but the flavor is the same! Lastly, feel free to swap out the honey for maple syrup if you’d like to keep this recipe vegan. #yourewelcome

Ingredients
- 1 cup long-grain white rice
- 1 15-oz. can lite coconut milk (full-fat works too!)
- 1 cup water
- 1 tablespoon honey (or maple syrup)
- optional topping: unsweetened coconut flakes
Instructions
- Place all ingredients inside of your Instant Pot and stir.
- Cook on high pressure for 8 minutes. It will take around 10 minutes to build enough pressure to start counting down.
- Once the timer goes off, quick release Instant Pot to let the steam out.
- Mix coconut rice and serve immediately.
Tips & Notes
There may be a few browner pieces of rice, but this is because the honey caramelizes. It’s my favorite part of this whole recipe because it gives it great texutre!

Wow, so my experience with this recipe was not that great. The rice was cruNchy and when i did The quick relase a buNch of coconut milk spewed out oF the vent. I Cleaned it up and put in for another 8 minutes. Most IP rEcipes for brown rice say to cook for 16-22 min.

I admit i used brown rice- i had a search Failure and misread the instructions. I’m sure 8 min is long Enough for white rice.

I have actually tried this with short-grain brown rice and medium-grain brown rice and it works just as well! I also added toasted coconut into the mixture and brought it to a potluck. Everyone LOVED it!
