Want to eat a cookie that’s healthy, but that doesn’t taste healthy? You’ve come to the right place! I’m excited to introduce you to –> Peanut Butter Protein Cookies!
Are protein cookies healthy?
The big question the internet is asking…are protein cookies actually healthy? Truth is, a lot of protein cookies that you can buy in the store are not necessarily healthy.
Why? Well, they are loaded with ingredients you can’t pronounce and sometimes even made with cane sugar!
What to look for
Make sure you look for a protein cookie recipe that…
- Has few ingredients
- Is refined-sugar free
- Higher than 6g protein/serving
Note: This protein cookie recipe is smaller than most store-bought protein cookies. For a better comparison, you can use the nutritional information of 2 cookies.
3 forms of protein!
Not only do you get protein from the protein powder, but also from 2 other ingredients in this recipe.
Peanut Butter: not only is peanut butter considered a fat, but it all packs in the protein! Per 2 tablespoons, there is 8g protein.
Protein Powder: We tested this recipe with both vegan protein powder as well as whey-based protein powder. It works great for both! In most protein powders, you’re looking at around 20+g protein/1/2 cup.

More on Protein Powder
Lucky for you, we have an entire post on Fit Foodie Finds called A Guide to the Best Protein Powder where we reviewed our favorite protein powders!
The protein powder you choose for this recipe is extremely important because it definitely adds flavor and sweetness to these cookies. Our 2 favorites are:
You can always use unflavored protein powder to really get the peanut/buttery taste OR swap it in for a chocolate protein powder.
Coconut Sugar
The 4th ingredient in this recipe is coconut sugar! We love baking with coconut sugar because it’s all-natural and not as sweet as a lot of other sugars on the market.
We have NOT tested this recipe with any other sugars such as cane, stevia, or brown sugar. If anything, we recommend swapping it 1:1 with brown sugar. Let us know if you have any modifications in the comments.
Storage
We recommend storing these cookies in the freezer for the best and longest results.
How to freeze: Place cooled cookies on a large baking sheet. Then, place in the freezer for 30 minutes. Remove and transfer into a freezer-safe gallon-size bag. Will last up to 3 months.

Peanut Butter Protein Cookie Recipe
Ingredients
- 1 cup all-natural drippy peanut butter*
- 2/3 cup coconut sugar
- 2 large eggs
- 1/2 cup vanilla protein powder, any kind*
- optional: 1/3 cup chocolate chips
- optional: coarse sea salt for topping
Instructions
- First, preheat oven to 350ºF and line a baking sheet with parchment paper.
- Next, place all ingredients into a medium-sized bowl and mix. The consistency should be like cookie dough.
- Spoon out around 1.5 to 2 tablespoons of dough into your palms and roll into a ball. Flatten between your palms to create a cookie-like shape and place on a baking sheet. Optional to add a few chocolate chips to the top of each cookie.
- Bake at 350ºF for 8-10 minutes or until the edges begin to turn golden brown.
- Let cool for 10-15 minutes so that the cookies can firm up.
Tips & Notes
- Peanut butter: make sure to use an all-natural drippy peanut butter. Our favorite brands are Kirkland, Trader Joe’s, and 365.
- Protein powder: all protein powders have their own unique taste so much sure you use one you like. Option to use a flavorless protein powder to really get the peanut buttery flavor.
- This recipe was slightly updated on February 12, 2020. The old recipe only called for 1 large egg, but after retesting multiple times, we’ve found that 2 eggs works best!
- Nutrition information was calculated using Garden of Life Vanilla Protein Powder and does not include chocolate chips.

I’ve never baked with coconut sugar before! But I love adding protein powder for baked goods. Do it all.the.time.
Both are great! Sometimes I find it hard when baking with PP that it gets a little hard. But it didn’t for these! #SCORE

Thanks Hill ๐ New Photoshop trick ๐
This sound awesome! I LOVE baking with coconut sugar and PB cookies are definitely one of my favorites ๐
PB COOKIES 4 LIFE!!! CEVG approved?!
having grown up in Toronto, I totally feel your pain. The first sign of falling leaves would typically send me into a tailspin.
No bueno.
I just realized that Toronto is like straight east of Minneapolis. I always thought since it was Canada it was way far north.
Least favorite? You don’t live here.
These look delicious! I’d try to eat them frozen, so it would be better for me to share a batch at work! ๐
I have the same issue. I actually prefer things cold/frozen…so sometimes that trick is only good if I “forget” about the cookies. #thatneverhappens
I love using protein powder for a flour sub – these look so great! Bet they’d be even more amazing with a smear of even more pb on top…. Now I’m hungry!
Been there done that…SO GOOD!!!
I love PB cookies! I think it’s awesome that you added in some extra protein into these. They’d definitely make a great snack!
Seriously, how easy can a cookie recipe be?? This is amazing! It is definitively on my to-do list!! WHat is the texture like? Crumbly, chewy, moist, dry?? I want some now ๐
Speaking of todo list, I want to pin this but there’s a werid error popping up: “Sorry! Users have reported that this url links to spam or inappropriate content.” What the heck? Can you do anything about this or is it a Pinterest problem?
Chewy slash moist, I would say! SO GOOOOOOD. I was able to Pin just fine! See if you can repin this —> http://www.pinterest.com/pin/105764291224594488/

I got the same message, lady just so ya know ๐
This is why you should migrate to Australia during the cold months.
I love making grain free pb cookies and the addition of protein powder? It’s practically a super cookie. And give me the processed PB over the all natural stuff anyway. #pbmum
#pbmum….I never know what you’re saying.
what if i don’t want to do the sugar
The only thing I can think of is adding a flour. You need some sort of ingredient that is flour/sugar like to make it bake like a cookie….If you don’t use sugar though, it won’t really taste like a cookie.
Could you do half flour and half sugar??
