Want to eat a cookie that’s healthy, but that doesn’t taste healthy? You’ve come to the right place! I’m excited to introduce you to –> Peanut Butter Protein Cookies!
Are protein cookies healthy?
The big question the internet is asking…are protein cookies actually healthy? Truth is, a lot of protein cookies that you can buy in the store are not necessarily healthy.
Why? Well, they are loaded with ingredients you can’t pronounce and sometimes even made with cane sugar!
What to look for
Make sure you look for a protein cookie recipe that…
- Has few ingredients
- Is refined-sugar free
- Higher than 6g protein/serving
Note: This protein cookie recipe is smaller than most store-bought protein cookies. For a better comparison, you can use the nutritional information of 2 cookies.
3 forms of protein!
Not only do you get protein from the protein powder, but also from 2 other ingredients in this recipe.
Peanut Butter: not only is peanut butter considered a fat, but it all packs in the protein! Per 2 tablespoons, there is 8g protein.
Protein Powder: We tested this recipe with both vegan protein powder as well as whey-based protein powder. It works great for both! In most protein powders, you’re looking at around 20+g protein/1/2 cup.

More on Protein Powder
Lucky for you, we have an entire post on Fit Foodie Finds called A Guide to the Best Protein Powder where we reviewed our favorite protein powders!
The protein powder you choose for this recipe is extremely important because it definitely adds flavor and sweetness to these cookies. Our 2 favorites are:
You can always use unflavored protein powder to really get the peanut/buttery taste OR swap it in for a chocolate protein powder.
Coconut Sugar
The 4th ingredient in this recipe is coconut sugar! We love baking with coconut sugar because it’s all-natural and not as sweet as a lot of other sugars on the market.
We have NOT tested this recipe with any other sugars such as cane, stevia, or brown sugar. If anything, we recommend swapping it 1:1 with brown sugar. Let us know if you have any modifications in the comments.
Storage
We recommend storing these cookies in the freezer for the best and longest results.
How to freeze: Place cooled cookies on a large baking sheet. Then, place in the freezer for 30 minutes. Remove and transfer into a freezer-safe gallon-size bag. Will last up to 3 months.

Peanut Butter Protein Cookie Recipe
Ingredients
- 1 cup all-natural drippy peanut butter*
- 2/3 cup coconut sugar
- 2 large eggs
- 1/2 cup vanilla protein powder, any kind*
- optional: 1/3 cup chocolate chips
- optional: coarse sea salt for topping
Instructions
- First, preheat oven to 350ºF and line a baking sheet with parchment paper.
- Next, place all ingredients into a medium-sized bowl and mix. The consistency should be like cookie dough.
- Spoon out around 1.5 to 2 tablespoons of dough into your palms and roll into a ball. Flatten between your palms to create a cookie-like shape and place on a baking sheet. Optional to add a few chocolate chips to the top of each cookie.
- Bake at 350ºF for 8-10 minutes or until the edges begin to turn golden brown.
- Let cool for 10-15 minutes so that the cookies can firm up.
Tips & Notes
- Peanut butter: make sure to use an all-natural drippy peanut butter. Our favorite brands are Kirkland, Trader Joe’s, and 365.
- Protein powder: all protein powders have their own unique taste so much sure you use one you like. Option to use a flavorless protein powder to really get the peanut buttery flavor.
- This recipe was slightly updated on February 12, 2020. The old recipe only called for 1 large egg, but after retesting multiple times, we’ve found that 2 eggs works best!
- Nutrition information was calculated using Garden of Life Vanilla Protein Powder and does not include chocolate chips.

I absolutely love these cookies! I make them and they disappear by the hands of my husband and daughter!
I made a couple slight tweaks. I share your love for Jiff peanut butter! I make my traditional photos cookies with Jiff, but I have to tell you. A 50/50 split of the Aldi simply nature organic pb and the jiff natural really really makes these cookies sing! I also add 1/2 tsp vanilla extract and use optimum nutrition vanilla whey. They are just scrumptious!
Thank you for the awesome recipe! Best protein cookie I’ve ever made!
So glad your change work <3 These cookies are BOMB.
i don’t know wtf this recipe is but they crumbled into dry ass powder right off the tray! waste of my protein and my peanut butter which is not cheap. shame on you for this nasty garbage
Is that netural penut butter, or regular?
This specific cookie uses regular!
I made these and they ended up really dry, I followed the recipe exactly. Any tips?
I’d use raisins instead of sugar. Supplies fiber (a little) and antioxidants. Also perhaps cinnamon.
These were amazing!!! I accidentally put less sugar in, but they still turned out fantastic! Thank you!
WOOO! Glad it still worked out. These are some of my favorite pb cookies!
Thank you for this recipe! My husband and I are always trying to put on weight, and we’re sick of protein smoothies, so we’re thrilled when we find a good recipe that sneaks protein powder in. We make them with chocolate protein, regular white sugar, and crunchy peanut butter, and they’re perfect. (The peanuts don’t stick well to the wet dough, but they stay in fine in the cookie.) I call these “two day” cookies because that’s how long they last between the two of us.
LOVE TIMES A MILLION. I can never eat just one cookie. sorrynotsorry
My cookies are falling apart. Do you have an idea why this is happening? Possibly, I didn’t let them cool long enough?? Thx!
Hey Barbara! How drippy was your peanut butter? Also, they need to cool completely before you pick them up!
The short ingredient list ! YESSSS. Making this for my dad tonight so he stays away from unhealthy snacks. ๐ Thank you!!
WOOOO! They are best if kept in the freezer ๐
OMG, these are so good! Found your site, was craving something sweet, had the ingredients, and gave them a try. Not only are they good but they turn out beautiful! I ate three–ashamed, and am putting the remainder in the freezer. Extra workout tomorrow! Love your recipes!!
Hahaha I am the same exact way when I make cookies! I eat 2 right away and then throw the rest in the freezer hoping I forget about them ๐ #neverworks
Didn’t have coconut sugar so i used Maple Syrup. SOOOO good!!!
YAY! So glad your substitution turned out well!
