The big question the internet is asking…are protein cookies actually healthy? Truth is, a lot of protein cookies that you can buy in the store are not necessarily healthy.
Why? Well, they are loaded with ingredients you can’t pronounce and sometimes even made with cane sugar!
What to look for
Make sure you look for a protein cookie recipe that…
- Has few ingredients
- Is refined-sugar free
- Higher than 6g protein/serving
Note: This protein cookie recipe is smaller than most store-bought protein cookies. For a better comparison, you can use the nutritional information of 2 cookies.

Not only do you get protein from the protein powder, but also from 2 other ingredients in this recipe.
Peanut Butter: not only is peanut butter considered a fat, but it all packs in the protein! Per 2 tablespoons, there is 8g protein.
Protein Powder: We tested this recipe with both vegan protein powder as well as whey-based protein powder. It works great for both! In most protein powders, you’re looking at around 20+g protein/1/2 cup.

Eggs: Eggs are an essential part of this recipe as they help bind each cookie together. There’s also a substantial amount of protein added from them too. 1 large egg has 6g protein.

You can always use unflavored protein powder to really get the peanut/buttery taste OR swap it in for a chocolate protein powder.
Coconut Sugar
The 4th ingredient in this recipe is coconut sugar! We love baking with coconut sugar because it’s all-natural and not as sweet as a lot of other sugars on the market.
We have NOT tested this recipe with any other sugars such as cane, stevia, or brown sugar. If anything, we recommend swapping it 1:1 with brown sugar. Let us know if you have any modifications in the comments.
Storage
We recommend storing these cookies in the freezer for the best and longest results.
How to freeze: Place cooled cookies on a large baking sheet. Then, place in the freezer for 30 minutes. Remove and transfer into a freezer-safe gallon-size bag. Will last up to 3 months.

Peanut Butter Protein Cookie Recipe
Ingredients
- 1 cup all-natural drippy peanut butter*
- 2/3 cup coconut sugar
- 2 large eggs
- 1/2 cup vanilla protein powder, any kind*
- optional: 1/3 cup chocolate chips
- optional: coarse sea salt for topping
Instructions
- First, preheat oven to 350ºF and line a baking sheet with parchment paper.
- Next, place all ingredients into a medium-sized bowl and mix. The consistency should be like cookie dough.
- Spoon out around 1.5 to 2 tablespoons of dough into your palms and roll into a ball. Flatten between your palms to create a cookie-like shape and place on a baking sheet. Optional to add a few chocolate chips to the top of each cookie.
- Bake at 350ºF for 8-10 minutes or until the edges begin to turn golden brown.
- Let cool for 10-15 minutes so that the cookies can firm up.
Tips & Notes
- Peanut butter: make sure to use an all-natural drippy peanut butter. Our favorite brands are Kirkland, Trader Joe’s, and 365.
- Protein powder: all protein powders have their own unique taste so much sure you use one you like. Option to use a flavorless protein powder to really get the peanut buttery flavor.
- This recipe was slightly updated on February 12, 2020. The old recipe only called for 1 large egg, but after retesting multiple times, we’ve found that 2 eggs works best!

I followed your recipe using Jiff and TGS protein. Three batches timed at 8, 10 and 12 minutes. All good. Since my protein has no flavor I could add vanilla but, it really didnโt need it.
The dough was more of a drop cookie than a โroll on your handโ type. The finished product is great!

These are absolutely delectable! I used Kirkland brand organic peanut butter and half cup of orgain protein powder. My two year old ate two right away and I ended up having two as well! Thanks for easy recipe!
Itโs like chewing on rice and has an aftertaste. Not bad, but i doubt iโll make it again.
