Make a double batch of these freezer breakfast burritos for an easy, healthy meal-prep breakfast you can enjoy all week long.

I say breakfast, you say burritos. Breakfast….BURRITOS. Breakfast…BURRITOS.
Hey guys, it’s Linley here. I am writing this post singing chants to myself that Lee and I would be chanting together, but she is in California on one of the best vacations ever. Lee and I have had totally opposite summer vacation schedule this year, so we have been working solo more often than usual. Sometimes it’s nice to have alone time. I love cozying up at a coffee shop or testing recipes while listening to the Dixie Chicks as loud as possible. However, what makes our job amazing is the chemistry we have on Team Fit Foodie. All recipe testing and day-to-day activities together are 100% better when Lee, Emily, and I are all together! For example, these breakfast burritos. TEAM EFFORT.
These Make Ahead Breakfast Burritos were inspired by burritos that Lee, Emily, and I had on our trip to Moab (check out more details HERE of all the food we enjoyed in Utah). We had our first big hike and needed to eat a breakfast that would sustain us until lunch. We went to Love Muffin Cafe and ordered the breakfast burritos. [OMG] The combo of chorizo, potatoes, egg, and cheese blew us away. It sounds simple, but the proportions were ON POINT.
Freezer Breakfast Burritos
Though our freezer burritos are not as ginormous as Love Muffin’s, we stuck to what we liked and went with pretty similar ingredients. As always, feel free to add your favorite veggies or a different cheese. Our freezer breakfast burrito fixings are just what we like, but make it your own and TAKE A PICTURE and let us know what you did!
The other goal we had with these freezer breakfast burritos was to make them a grab-n-go breakfast! I am all about the savory breakfast, so I am always down with a quick make ahead breakfast burrito in the morning. Prep them at the beginning of the week and stick them in the freezer. When you get up in the morning, grab a burrito, unwrap, stick one in the microwave or oven while you’re brushing your teeth and BOOM. It’s ready for you to devour quick before you leave or travel with you to work.

How to Make a Breakfast Burrito
Making breakfast burritos is quite simple. Our breakfast burrito recipe is composed of 4 different parts.
- Scrambled Eggs: Basic, but so necessary for this recipe! If you’re using an extra large tortilla, feel free to up the number of eggs you use for this recipe!
- Breakfast Potatoes: There’s nothing better than perfect breakfast potatoes and for this recipe, we roasted the potatoes at 400ºF. Feel free to add other seasonings and have fun with it.
- Breakfast Sausage: Ground breakfast sausage is what we suggest for freezer breakfast burritos, but you’re more than welcome to use sausage links (cooked or pre-cooked). Either will work!
- Tortilla: I always suggest using a gluten-based tortilla because they wrap the best! We recommend using a flour or whole wheat flour tortilla for this recipe.
If you’re not planning to eat your burritos right away, no fear! You can easily wrap these guys up with tin foil and reheat later. These freezer breakfast burritos have been tested and approved by many.
How to Re-Heat a Freezer Breakfast Burrito
- If heating from frozen, unwrap and place on a plate and then into the microwave. Use the defrost setting on your microwave for 2 to 3 minutes, flipping every minute. Then microwave on high for 60-90 seconds or until hot.
- If heating from thawed, microwave on high for 60 to 90 seconds.

This recipe is a true masterpiece! The presentation is beautiful and the taste is out of this world. I can’t wait to make it again.
Great recipe! easy to make and pretty tasty.
Will this work if I add some bell peppers and spinach and still freeze them ?
Definitely!
So I haven’t tried anything yet. But I am cooking the shredded chicken burritos tonight for dinner. I am the cook in the household, 7 and I’m the only female so basically it’s all boys. But I do all the cooking and always looking for something new to try. Feel free to send some recipes my way and I’ll definitely give it a try. Thanks
To all my lazy vegetarians/vegans: just substitute the sausage for black beans, and if I’m being honest, I’m pretty lazy, but sometimes it’s good because it taught me that instead of seasoning the bland beans just buy packs of taco seasoning and pour that into the beans, it’s so good
Good recipe, but can you explain the bit about “Singing chants?”
I’m intimidated by burritos but your photos helped me roll them nice and secure. I tried to use egg whites and that lost a LOT of volume but made up for it in potatoes. Next time I need more cheese and maybe hot sauce inside too.
Just made a double batch of these for my husband! He’s super excited to eat them. Would it work to reheat them in the toaster oven instead of microwave? If so, any recommendations on how long?
Hey Kaitlyn! I think a toaster oven should be fine. I don’t have one of those so I can’t speak to length!
Hello,
I really like this site, but the ads are overwhelming! It makes it very difficult to navigate when this website redirects/freezes/constantly tries to sell something! I understand making money and supporting, but could you tone it down so I can simply read your articles and recipes? It is too frustrating to try and sort thru the mess to try and read your material.
Thank you,
Tom
Hey Tom! We have a new website launching this month that helps with all of your pointers!
Tom, you can install an ad blocker on your browser (just google “ad blocker for chrome” or whatever browser you use, and you can install it with a click. Solved! I see no ads at all.
How long are they good for if I refrigerate them? Excited to try this recipe!
I would freeze them, not refrigerate!
” They are packed with veggies and protein “… What “veggies” are in this recipe? Packed with potatoes, sausage, eggs and cheese…
A potato is a vegetable.
Actually, it’s a starch
Instructions are easy to follow! I will definitely be making again. Thank you!
Love this recipe! The only change was the addition of a healthy spoonful of pinto beans as requested by my Mexican American husband.
Perfect for on the go! Made exactly 10 burritos and had a little filling left over for dinner. Will definitely be making again.
Made this morning- outstanding – problem is I was only able to make 4 burritos for freezing. Between my son & I, we ate 6 servings of filling before I could get the burritos made😂. I will definitely make again!
LOL! We’d love it if you could give us a star rating for this recipe!
We started making these months ago and have been a life saver for our early mornings when working. We’ve tried using hash browns instead of potato’s and That’s been great too! Easy to make, heat and eat. YUM!
I make them about once a month, too! A double batch for the entire month <3
I’m stocking up my freezer before I have a baby and these are perfect! I can hold a burrito in one hand and a baby in the other haha! Thanks for the recipe!
I’ve been doing these for about 12 years now.
Monday mornings I get up early to make them before the (4) kids school. I just keep them in the refig. for a hot breakfast (brainfood for school instead of cereal) or a quick healthy snack after school or sports. I used about 2 dz. eggs and by Thurs. morning, they are gone!
I admit, we don’t get to freezing them. Plus, the freezing process changes the texture of the eggs. I love that I can do it all in one pan making cleanup a breeze for a week’s worth!
Tip: Don’t use plastic wrap. They will stick. Only foil.
All the adds on your blog make it really hard to read what you wrote! The page is constantly moving up or down every time one of the many ads changes. I know you’re probably trying to earn money from these ads being on your website but it is taking away from the quality of your blog! Hope you can fix whatever ad is making your blog jumpy & slow
Thanks so much for the feedback!!
Wanting to thaw and re heat in oven. What temperature and for how long do I “cook” burritos strait from freezer to oven? Thanks!
Hey Kristy. I haven’t tried this, but I suggest defrosting in the microwave, it will go much faster. Or, alternatively, you can defrost in the fridge overnight and then bake in the oven! Hope this helps!
