- Rolled Oats (you can sub quick cooking, but we prefer the texture of rolled)
- Creamy Peanut Butter
- Banana
- Unsweetened Almond Milk
- Greek Yogurt
- Honey
- Chia Seeds
- Cinnamon
- Vanilla
Ingredient Swaps
- Add protein: If you’re hoping to fit more protein into your diet, go ahead and try adding around 2 tablespoons of your favorite protein powder or collagen.
- Use a different sweetener: feel free to swap the honey for maple syrup, agave, or even brown sugar.
- Swap the peanut butter: if you can’t do peanut butter, any kind of nut butter works.

Peanut Butter Banana Overnight Oats
Ingredients
Wet
- 1/2 medium banana mashed
- 2 tablespoons peanut butter creamy
- 1/4 cup nonfat, plain Greek yogurt plain
- 3/4 cup almond milk unsweetened
- 1 tablespoon honey
- 1 teaspoon vanilla extract
Dry
- 1 cup rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon cinnamon
Instructions
- First, mash 1/2 banana in a large bowl. Then add the rest of the wet ingredients and mix until smooth.
- Add in dry ingredients and mix again.
- Place in the refrigerator, covered, for at least 2 hours or overnight. Serve cold.
Tips & Notes
- Feel free to double this recipe.
- It should stay good refrigerated for up to 3-4 days.
- Depending on how thick you like your overnight oats, you may add a splash of almond milk before serving.

Made this on a whim at 12:30 am so I’d have a good breakfast. I have non alcoholic liver disease and need healthy food choices and this recipe for the bill! I can’t wait to try it later this morning as I get the munchkins off to school. I totally sampled a few spoonfuls before sticking it in the fridge and I’m sure I’ll be dreaming of this!

I just made these and HOLYYYY they are good!! I’m sometimes iffy on overnight oats, particularly when they’re too liquidy. These were the perfect consistency and flavour! Now I’ll (happily) have to go back through your archives and make the many different versions 🙂

You don’t have to! You will need to decrease the liquid a bit, though!

I made this recipe late last night for a easy start to a very early work day and it was delicious! Seriously can’t believe how good it tasted – it was enough to wake me up and get me going and feel full from 6 am – 2pm so thank you 🙂 it was also super easy to make. I altered it a bit – almond instead of peanut butter, nutmeg instead of cinnamon and no Greek yogurt and I used steel cut oats instead of rolled and it is the most amazing and hearty breakfast!

Yes, the steel cut oats worked amazingly! The whole thing tasted like a soft, almost buttery texture – which would make me feel guilty except knowing there’s nothing bad in it 🙂
