One thing I stand by in the kitchen is making my own homemade seasonings. No weird fillers or ingredients you can’t pronounce. This easy pot roast seasoning was developed out of a need for a great seasoning that we could grab and slather on a big chuck roast!
We use this homemade roast seasoning in our Classic Pot Roast recipe and our Instant Pot Pot Roast recipe and they’ve both got 5-star ratings!
Pot Roast Seasoning Ingredients
- Brown Sugar
- Garlic Powder
- Onion Powder
- Dried Oregano
- Dried Thyme
- Dried Parsley
- Coarse Salt
- Pepper
Variations
- Add some heat: If you like a little spice, feel free to 1/2 teaspoon of paprika or red pepper flakes.
- Add Italian seasoning: swap the oregano, thyme, and parsley for 6 teaspoons of Italian seasoning.
Storage
Store leftover seasoning in an airtight container or glass jar in a cool, dark place for up to 6 months.

Easy Pot Roast Seasoning
Ingredients
- 1/4 cup brown sugar
- 2 tablespoons garlic powder
- 1.5 tablespoons onion powder
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons dried parsley
- 1.5 tablespoons coarse salt
- 2 teaspoons pepper
Instructions
- Place all ingredients for the pot roast seasoning into a large glass container or mason jar.
- Then, stir the spices together to create your rub.
- Seal jar and store remainder in a dry, cool place.
Tips & Notes
- This is enough seasoning for two 2.5 – 3 lb. pot roasts.
- Use 2 tablespoons per pound of meat
- Yields: 3/4 cup

Hi there! How to think this would be if I just put water in my crockpot? Since there may be times where I don’t have a beef broth.
It would definitely lose a lot of flavor. Beef broth is essential!
When you say 1/4 cup of brown sugar, is that packed or loose?

This rub was great! I used it with venison, added a little bit of cayenne and red pepper and the meat came out aromatic, succulent and tender!!!
I want to use this recipe on my roast. But how do you suggest cooking the roast with the dry rub on it?! I usually add beef broth and veggies in the slow cooker with mine. Do you suggest leaving it in the crock pot by itself? And for how long?Thank you!
Hi! We suggest dry rubbing your beef and then searing it on both sides before putting everything into the slow cooker with your beef broth and veggies. The rub will help flavor your sauce/gravy! So good.
Catey, I didn’t sear it first, but I let the rub sit on the roast for close to an hour while I was chopping the vegetables and other herbs to add to the crockpot. So yummy!
I mix the dry seasoning in a small jar with 2 TBL of olive oil and 2 TBL of red wine vinegar and shake well. I then pour that over the meat and it stays on top.
If no one has brought this to your attention – your web page is broken. I’ve uploaded a screen shot of the 3/4 (1x) recipe just as it appears when I load into the page (didn’t touch any buttons, just loaded in from Google). Then, while skimming through other comments I decided to look through the 1x, 2x, and 3x. That’s when I noticed the recipe changed for 1x! So, just a heads up!
With the being said – I cooked before I explored, so I used the measurements in the screen shot. Regardless if they’re wrong or not, the flavor was awesome! My pot roast turned out great! Both me and my other half loved it sooo much! (I also combined this recipe with 1 cup of breadcrumbs and about 4 to 5 tablespoons of olive oil. Then packed it on a but thick to make a crust on my roast. Delicious!)

Made the single recipe and loved it. I wanted to make the 3X the ingredients batch for Christmas gifts, however, the garlic salt went from 2 tablespoons, for a single recipe, to 1 1/2 tablespoons for the 3 X the recipe. Could you clarify that for me..
Hey Bonnie! I think you’re referring to garlic powder. The single recipe calls for 1/2 tablespoon and if you multiple it by 3, that is 1.5 tablespoons. I hope this helps!
I see what you mean. Apparently the 1X recipe is actually enough seasoning for TWO (2.5-3 lb) roasts. I tripped over this myself and ended up double seasoning my meat.
