What I love most about this recipe is that you can use whatever berries you have on hand in this recipe. We used three different kinds (hence the triple-berry), but you can you 1 kind, 2 kinds or 5 kinds!

Watch out for this–> Try your berries before you use them! Some berries may be really tart! If your berries are super tart, feel free to add a little extra maple syrup to balance out the sweet + tart!

Frozen berries are an excellent choice! Feel free to swap in frozen triple berries or any kind of frozen berries.

Do I have to use an 8×8-inch pan for this bread?

We do recommend using an 8×8-inch pan for this bread! You could try a 9×9-inch or loaf pan, but the bake time would change so you would need to keep a very close eye on the bread!

What do I top berry bread with?

You can top your breakfast bread with anything you fancy! Here are a couple of great options!

  • Nut butter (cashew, peanut butter, almond)
  • Greek yogurt
  • Coconut whip
  • Fresh berries
  • Granola

Can I substitute the berries with a different fruit?

If you don’t have berries, feel free to substitute chopped apples!

Can I freeze breakfast bread?

Yes, you can freeze breakfast bread! We recommend letting the bread cool completely before wrapping it in plastic wrap to seal out air and then tin foil!

The breakfast bread can last up to three months in the freezer.

Triple Berry Bread

This triple berry breakfast bread is a moist, perfect for a quick morning breakfast, and it is so easy to make! Make a pan of this breakfast bread and top it with your favorite nut butter or Greek yogurt!

Ingredients 

Dry

  • maple syrup/honey
  • nut butter

Instructions 

  • First, preheat oven to 350ºF and spray an 8×8-inch square baking dish with nonstick cooking spray.
  • Combine all dry ingredients minus the berries in a large bowl and whisk to combine. Next, add wet ingredients into the dry ingredients and mix with a wooden spoon to combine. Finally, add berries and lightly mix to combine.
  • Transfer batter into baking dish and sprinkle on additional berries and oats, if desired. Bake at 350ºF for around 40 minutes or until the center is fully cooked.
  • Let breakfast cake cool for at least 15 minutes before slicing and serving.

This is an awesome idea–both my father and husband (who like light breakfasts) really like this. I made this with a number of changes: chopped loquats instead of berries, einkorn flour instead of white whole wheat, 2% milk instead of almond, and full fat Greek yogurt instead of nonfat. Because I used einkorn flour, I had to use a slightly heaping tbsp of baking powder instead of 1/2 tsp and reduced the applesauce to 1/4 cup instead of 1/2 cup. However, after all these small changes, I ended up with something very tasty that looked very similar to the pictures.

Mine didnโ€™t cook in the middle either! I put it back in after it cooled so I guess we will see what happens. The tooth pick came out clean so who knows what I did wrong

This was delicious. I topped it with a cup of the Chobani less sugar Greek yogurt and some extra berries. Super satisfying breakfast.

I made this today and it was delicious! I did make a few changes and used 1 cup regular flour and a 1/2 cup whole wheat flour and used a 9×9 pan. It only took 30 min to cook. So yummy!

This breakfast was a real crowd pleaser! Easy, breezy to make and Iโ€™m all thumbs when it comes to baking. I subbed in pantry: all purpose white flour, gluten free rolled oats, used a thawed frozen banana, and frozen triple berry mix from Costco.

Iโ€™ll be making this again for sure!

You can use a gluten-free all-purpose blend and then certified rolled oats!
