Talking on the phone + Grocery Shopping = Epic Fail
I clearly wasn’t paying attention because instead of…vegetable broth and black beans I got chicken broth and refried black beans. And I thought I was good at multitasking…When I got home, I was FURIOUS. I make a special trip to the grocery and mess up my two main ingredients! *angry face* Anyways, I decided to continue on with my black bean soup making. My original plan was to make a Chunky Black Bean Soup, with whole black beans. I also wanted it to be vegetarian, hence the vegetable broth. My new plan was a “creamy” black bean soup with corn (because I found a can in my pantry).
Crock-Pot Black Bean Soup
-2 cans refried black beans
-1 can sweet corn
-1 can chicken/vegetable broth
-1 jalapeno pepper, finely chopped (optional)
-1/2 large sweet onion, chopped
-1T chopped garlic
-1/2t ground pepper
I actually don’t know if it is possible to mess this recipe up. Literally you throw everything into a crock-pot, flip the switch to high, and walk away. (Of course, occasionally coming back to give it a stir!)
So in the end, it didn’t turn out half bad. I like this soup because it’s thick and hearty. I garnished it with more ground pepper.
I obviously didn’t stop there, I had some extra quinoa in the fridge and threw a few scoops on top for some extra nutritional value and texture.
Who am I kidding. I put salsa on everything, so that was added in too
TGI Weekend. I decided to be a procrastinator this week and now I have a butt load of homework to do. *wahoo*
