This easy overnight oats recipe is packed with protein, fiber, and healthy fats (and rivals Neapolitan ice cream, if you ask me!).

The overnight oats version of Neapolitan is so good that our toddlers eat every single flavor. Make all three flavors separately and layer them up for the absolute best overnight oats ever.
Prep this delicious recipe the night before by simply mixing everything together in a bowl. The only “major” thing you have to do is puree the strawberries for the strawberry portion. Then, give your oats an overnight soak. The next morning, you’ll find that your new favorite make-ahead breakfast is ready to be enjoyed!
What You Need to Make Neapolitan Overnight Oats
- Rolled oats: Also known as old-fashioned oats, these are the base of our oats and provide the perfect chewy texture.
- Chia seeds: Chia seeds give the overnight oats a pudding-like texture that makes them ultra-creamy.
- Greek yogurt: To add protein and creamy texture to the old-fashioned rolled oats.
- Unsweetened, plain almond milk: A great non-dairy milk option, but any kind of milk will work.
- Vanilla extract: This is what gives the vanilla portion of the oats its flavor.
- Honey: A great natural sweetener that compliments the vanilla and strawberry flavors.
- Cocoa powder: We use cocoa powder to add chocolate flavor without the added sugar of traditional chocolate sauces or syrups.
- Maple syrup: The perfect natural sweetener for the chocolate portion of the overnight oats.
- Strawberries: Fresh strawberries are pureed to give the oats a natural strawberry flavor.
Food processor: You’ll need a food processor or magic bullet to puree the strawberries.
Substitutions & Fun Variations
My favorite thing about overnight oatmeal recipes is that you’re free to use your favorite flavor combinations and make them your own. Here are some ideas:
Milk: Swap the almond milk for another dairy-free milk such as coconut milk, oat milk, soy milk, cashew milk, etc. Dairy milk would also taste great — use your milk of choice!
Sweetener: Brown sugar would be a great replacement for maple syrup. You could also use monk fruit sweetener, coconut sugar, agave nectar, or any other liquid sweetener you have on hand.
Yogurt: Use a non-dairy yogurt or regular yogurt, depending on your dietary preferences.
Protein boost: Stir in your favorite protein powder for an extra boost of protein. You could also add peanut butter and almond butter or sprinkle on some sunflower seeds, hemp seeds, or flax seeds.
Fruit: Go beyond just using strawberries and try other fresh fruit like blueberries, raspberries, peaches, or bananas. You could also use frozen fruit if that’s what you have on hand.
Tips for Best Results
- Use ripe fruit: Make sure your strawberries are ripe before pureeing them for the oats. This will give them the best flavor and sweetness.
- Mix well: Make sure to mix all of the ingredients together until everything is combined. This will ensure that each bite has a good balance of flavors.
- Soak overnight: To get the best texture, make sure to let your oats soak for at least 6 hours, preferably overnight. This allows the oats and chia seeds to absorb the liquid and become soft and creamy.
How to Store Neapolitan Overnight Oats
Overnight oats are the perfect make-ahead breakfast, and they will keep in the fridge for up to 5 days. Make sure to store them in an airtight container or mason jar for best results.
In the morning, you can eat them cold straight from the fridge or heat them up in the microwave for a warm breakfast option.

Ingredients
For the Vanilla
- 1/3 cup rolled oats
- 1/2 teaspoon chia seeds
- 2 tablespoons plain Greek yogurt
- 1/3 cup unsweetened, plain almond milk, any kind of milk will work
- 1/4 teaspoon vanilla extract
- 1 teaspoon honey
For the Chocolate
- 1/3 cup rolled oats
- 1/2 teaspoon chia seeds
- 2 teaspoons cocoa powder
- 1/3 cup unsweetened, plain almond milk, any kind will work
- 1/2 tablespoon maple syrup, or any kid of sweetener
For the Strawberry
- 1/3 cup rolled oats
- 1.5 tablespoons plain Greek yogurt
- 2 large strawberries
- 1/2 teaspoon chia seeds
- 1/4 cup unsweetened almond milk, any kind of milk
- 1 teaspoon honey
- pinch of salt
Instructions
- For the vanilla and chocolate layers, mix all ingredients in a small bowl and place in the refrigerator for at least 2 hours or overnight.
- For the strawberry layer, place strawberries and milk into a small food processor or magic bullet and puree. Then, mix with the rest of ingredients in a small bowl. Place in refrigerator for at least 2 hours or overnight.
- In the morning, serve layered like Neapolitan ice cream.

First time making this and love the flavor! Next time I would use a tad less milk in my strawberry and vanilla, but it was still enjoyable! I’m having a hard time finding the serving size for 251 calories please? Thanks!
