I guess it’s really not THAT interesting, but it’s definitely true. You can even ask Blake. There are nights when I drag him to Dairy Queen or to a frozen yogurt place, just so that I can get my fix. Best part is, he usually doesn’t order anything! Eating ice cream alone is worse than going to the movies alone…
How could he, right?
I’m super pumped about this recipe because it’s so flipping gorgeous and is like the best thing I’ve ever eaten. Each section is made with a combination of Greek yogurt, milk, and chia seeds.
Neapolitan Overnight Oats Flavor Layers
- Vanilla: vanilla extract or vanilla bean
- Chocolate: cocoa powder
- Strawberry: pureed strawberries
Neapolitan Overnight Oats

Ingredients
For the Vanilla
- 1/3 cup rolled oats
- 1/2 teaspoon chia seeds
- 2 tablespoons Greek yogurt
- 1/3 cup milk (any kind)
- 1/4 teaspoon vanilla extract
- 1 teaspoon honey
For the Chocolate
- 1/3 cup rolled oats
- 1/2 teaspoon chia seeds
- 2 teaspoons cocoa powder
- 1/3 cup milk (any kind)
- 1/2 tablespoon maple syrup (or any kid of sweetener)
For the Strawberry
- 1/3 cup rolled oats
- 1.5 tablespoons Greek yogurt
- 2 large strawberries
- 1/2 teaspoon chia seeds
- 1/4 cup milk (any kind)
- 1 teaspoon honey
- pinch of salt
Instructions
- For the vanilla and chocolate layers, mix all ingredients in a small bowl and place in the refrigerator for at least 2 hours or overnight.
- For the strawberry layer, place strawberries and milk into a small food processor or magic bullet and puree. Then, mix with the rest of ingredients in a small bowl. Place in refrigerator for at least 2 hours or overnight.
- In the morning, serve layered like Neapolitan ice cream.

I feel like my favorite flavor changes depending on the season, or where I am in the world. Ever since I tried pistachio gelato in Florence, I have been hooked on that flavor ice cream. And coconut, well it just rocks.
As for this recipe…if I had to choose which layer is my fave…I’d say hands down it’s the strawberry layer! The pureed strawberries give this recipe so much amazing flavor and color. Don’t skimp on this layer, people!

Yum!!! I cannot wait to try some of these overnight oats recipes. Do you always eat this the morning after (or night of) making it? I’m wondering if I could double a recipe and eat it for a couple days in a row.. just not sure if it would keep well or not!
Hey Andrea! I usually let them sit overnight and eat them the next day. You can double or triple any of my overnight oat recipes because they should stay good for up to 5 days in the fridge! That’s the beauty of overnight oats 🙂
I am in LOVE with this recipe. I have made it every week since you posted it! Strawberry is by far my favorite layer, so much that this week I made 2 batches of strawberry and omitted the chocolate layer. Another great variation…SO GOOD! Thanks for yet another amazing recipe, Lee!

I think whenever I’m eating Neopolitan ice cream, the strawberry is usually my fave! Girl, these overnight oats are genius! I haven’t made a batch of overnight oats in weeks. Need to change that!

Ice cream is my favorite dessert, too. My favorite plain flavor is probably peanut butter or vanilla, but I usually favor flavors with lots of mix-ins (, Reese’s, cookie dough, Oreos, etc.). This recipe is beautiful and looks delicious!

The recipe serves 2! So it’s actually only a total of 1/2 cup of oats (the standard servings size) that you’ll be eating per serving.
Oh WOW- this looks insane…SOdelish! Like you, ice cream is my all-time favourite dessert – I’d take a bowl of plain Jane vanilla ice cream over a slice of gateau any day! If I’m being fancy, my favourite flavour is Cookies & Cream or Cookie Dough…otherwise vanilla is fab enough!

My taste buds are totally changing this Spring…As of lately I am craving citrus and finally picked up some beautiful navel oranges from Trader Joe’s. As far as ice cream goes, I love pistachio…and coffee!
o0o citrus is my jam!! Try slicing them up and throwing them in the freezer for about an hour. They become half frozen are are SO GOOD.
