- cocoa powder
- baking powder
- baking soda
- maple syrup
- egg white
- unsweetened almond milk
Mug Cake Instructions
Start off by spraying your mug with coconut oil cooking spray. Make sure you fully coat that sucker so nothing sticks. Then, add in all of the dry ingredients and mix. Whisk together wet ingredients in a separate small bowl and then pour into the mug. Mix together all ingredients. Microwave on high for 90 seconds to 2 minutes. Coconut Flour Chocolate Mug Cake
Ingredients
Dry
- 2 tablespoons coconut flour
- 1 tablespoon cocoa powder
- 1/8 teaspoon baking powder
- 1/8 teaspoon baking soda
Wet
- 1 tablespoon maple syrup For keto option, sub 1/8 teaspoon liquid stevia
- 1 egg large white
- 1/4 cup + 1 tablespoon unsweetened almond milk
Instructions
- First, spray a coffee cup with coconut oil cooking spray and set aside.
- Then, mix together all of the dry ingredients inside of the coffee cup. Set aside.
- In a small bowl, whisk together maple syrup, egg white, and almond milk. Then add the wet ingredients to the dry ingredients and mix again.
- Microwave on high for 90 seconds to 2 minutes.
- Top with your favorite nut butter and dark chocolate chips.
Oh yes I already know what is going to be my after dinner snack, I will try to pick a small mug for this project, I said try. I have some homemade vanilla ice cream that would go perfectly on top of this goodie.

NOM I need to make this! I have all the ingredients on hand and I survived my son’s first body party so I deserve it! PS I hate scary movies too. And there is something about corn mazes that makes me feel like a crazy person. The thought of not being able to escape when I need to FREAKS ME OUT. I have a hard time with elevators for Pete’s sake!
I think corn mazes make you feel crazy because everyone around you is crazy. Like legit crazy.

I used to be horror movie addict! Well, not really addict, but I loved to watch them a lot. Especially really bloody ones…(like Saw, I watched all of them, several times LOL), but not so much those psycho freaking movies. Now I haven’t watched a horror movie in forever, not sure why, I guess my preferences changed. But guess what, now I’m not scared in the dark anymore , go figure! HAHAHA 😀

Two things: why no egg yolks? And, has anyone ever tried these recipes In a regular oven? I don’t use microwaves.
Hey Allison! I didn’t use the egg yolk because that’s a lot of egg for a single serve dessert! Usually a whole pan of brownies only has 2 eggs and that’s for 9-12 servings! You could totally bake this. I’d go 350 for maybe 15-20 minutes!
I’m only replying in case someone reading this now has the same question about the egg – you can use the entire thing and it works great. I know the fate of an egg yolk if I “keep it to use later”…So I just threw the whole thing in and reduced the milk a smidge and it was perfect! This is probably one of the best mug cakes I’ve had.
No answer for the oven, but it is answered above.

This looks amazing! And I’m so grateful because 2 years ago I discovered the awesomeness that are mug-cake but since then I transitioned to a healthy diet and didn’t make any since (all that white flour and refined sugar didn’t make it that appealing). But I have tons of coconut flour at hom and always wonder what to do with it, so mug cake for dinner it shall be! 😀
ps: On the scary front: in high school my best friend and I watched tons of horrors/thrillers and didn’t even blink at all the gore/thrill/suspense. But since I’ve grown up (this sounds ridiculous lol) I got scared and don’t want to watch anything horror-like. I like some investigating series like The Mentalist etc. but no horrors thanks.

Hey Annie! I didn’t add the yolk because a full egg is a lot for 1 serving! Usually in a pan of brownies or a cake, I only use 2 eggs, so by using just the egg white, it cuts down on liquid!
I have yet to hop on the mug cake bandwagon, but this sure makes me want to!

Ummm pretty sure we are twinsies. I can’t even watch a preview of a scary movie without really wanting to close my eyes. In fact, usually I just look away and my husband laughs at me. And how about all the rather scary TV shows on these days!? Can’t even watch those commercials. I change the channel or close my eyes again :-p
