Three flavors are better than one! Make Neapolitan Overnight Oats and get a HEALTHY bite of chocolate, vanilla, and strawberry in every bite.
This easy overnight oats recipe is packed with protein, fiber, and healthy fats (and rivals Neapolitan ice cream, if you ask me!).

“I am in LOVE with this recipe. I have made it every week since you posted it! Strawberry is by far my favorite layer, so much that this week I made 2 batches of strawberry and omitted the chocolate layer. Another great variation…SO GOOD! Thanks for yet another amazing recipe, Lee!” – Beth
The overnight oats version of Neapolitan is so good that our toddlers eat every single flavor. Make all three flavors separately and layer them up for the absolute best overnight oats ever.
Prep this delicious recipe the night before by simply mixing everything together in a bowl. The only “major” thing you have to do is puree the strawberries for the strawberry portion. Then, give your oats an overnight soak. The next morning, you’ll find that your new favorite make-ahead breakfast is ready to be enjoyed!
What You Need to Make Neapolitan Overnight Oats
- Rolled oats: Also known as old-fashioned oats, these are the base of our oats and provide the perfect chewy texture.
- Chia seeds: Chia seeds give the overnight oats a pudding-like texture that makes them ultra-creamy.
- Greek yogurt: To add protein and creamy texture to the old-fashioned rolled oats.
- Unsweetened, plain almond milk: A great non-dairy milk option, but any kind of milk will work.
- Vanilla extract: This is what gives the vanilla portion of the oats its flavor.
- Honey: A great natural sweetener that compliments the vanilla and strawberry flavors.
- Cocoa powder: We use cocoa powder to add chocolate flavor without the added sugar of traditional chocolate sauces or syrups.
- Maple syrup: The perfect natural sweetener for the chocolate portion of the overnight oats.
- Strawberries: Fresh strawberries are pureed to give the oats a natural strawberry flavor.
Food processor: You’ll need a food processor or magic bullet to puree the strawberries.
Substitutions & Fun Variations
My favorite thing about overnight oatmeal recipes is that you’re free to use your favorite flavor combinations and make them your own. Here are some ideas:
Milk: Swap the almond milk for another dairy-free milk such as coconut milk, oat milk, soy milk, cashew milk, etc. Dairy milk would also taste great — use your milk of choice!
Sweetener: Brown sugar would be a great replacement for maple syrup. You could also use monk fruit sweetener, coconut sugar, agave nectar, or any other liquid sweetener you have on hand.
Yogurt: Use a non-dairy yogurt or regular yogurt, depending on your dietary preferences.
Protein boost: Stir in your favorite protein powder for an extra boost of protein. You could also add peanut butter and almond butter or sprinkle on some sunflower seeds, hemp seeds, or flax seeds.
Fruit: Go beyond just using strawberries and try other fresh fruit like blueberries, raspberries, peaches, or bananas. You could also use frozen fruit if that’s what you have on hand.
Tips for Best Results
- Use ripe fruit: Make sure your strawberries are ripe before pureeing them for the oats. This will give them the best flavor and sweetness.
- Mix well: Make sure to mix all of the ingredients together until everything is combined. This will ensure that each bite has a good balance of flavors.
- Soak overnight: To get the best texture, make sure to let your oats soak for at least 6 hours, preferably overnight. This allows the oats and chia seeds to absorb the liquid and become soft and creamy.
How to Store Neapolitan Overnight Oats
Overnight oats are the perfect make-ahead breakfast, and they will keep in the fridge for up to 5 days. Make sure to store them in an airtight container or mason jar for best results.
In the morning, you can eat them cold straight from the fridge or heat them up in the microwave for a warm breakfast option.

First of all, I can’t believe Blake doesn’t order ice cream. That is terrible! I LOVE fro yo too. Yogurt Lab is the best in all the land. ALSO, these overnight oats look fantastic. The strawberry layer…. YUMS.
Fro yo date on Friday?!?! I think yes.
Ice cream is my favorite dessert, too. My favorite plain flavor is probably peanut butter or vanilla, but I usually favor flavors with lots of mix-ins (, Reese’s, cookie dough, Oreos, etc.). This recipe is beautiful and looks delicious!
I don’t think I can wait overnight to eat this dessert. It is gorgeous and healthy!
RIGHTT!! I did eat this as dessert the other night. WHY NOT?!
So pretty! This looks like a lot of food though — is this just for one meal/breakfast? Looking forward to trying it!
The recipe serves 2! So it’s actually only a total of 1/2 cup of oats (the standard servings size) that you’ll be eating per serving.
Oh WOW- this looks insane…SOdelish! Like you, ice cream is my all-time favourite dessert – I’d take a bowl of plain Jane vanilla ice cream over a slice of gateau any day! If I’m being fancy, my favourite flavour is Cookies & Cream or Cookie Dough…otherwise vanilla is fab enough!
I alwayssss as for “just the a la mode” ๐ If it comes with pie…that’s a bonus.
How on earth have I NEVER tried overnight oats? I just make them every single morning But when there is ice cream flavor goodness at stake, I need to get my face on this!
P.s favorite flavor? MOOSE TRACK…so Ya, I’ll try that one too ๐ Pinned!
GIRL. First cashew butter, now overnight oats. Yah killin me smallz.
My taste buds are totally changing this Spring…As of lately I am craving citrus and finally picked up some beautiful navel oranges from Trader Joe’s. As far as ice cream goes, I love pistachio…and coffee!
o0o citrus is my jam!! Try slicing them up and throwing them in the freezer for about an hour. They become half frozen are are SO GOOD.
LOVE this ice cream-inspired overnight oats recipe! My favorite ice cream flavor… anything with chocolate chips and caramel (usually with a vanilla base).
It looks gorgeous Lee! And just like you, ever since I tasted for the first time pistachio ice cream in Verona, Italy, I’ve been hooked, and it is my favourite ice cream flavour! ๐
SO GOOD SO GOOD.
Ohh I love this!! SO much prettier and more exciting than just one flavour!
