These Strawberry Vanilla Overnight Oats are a breakfast meal-prep miracle! All you have to do is throw all of the ingredients into a jar, let them sit overnight, and breakfast is ready in the morning.
Not only are these overnight oats tasty, but they are packed with fiber and protein to keep you satisfied until lunch!
We Love Oatmeal!
You may not know this, but I eat oatmeal EVERY SINGLE MORNING (unless it’s the weekend). Oats + Banana + PB is my favorite combination.
During the warmer months, I like to mix it up and eat Overnight Oats, but soaking my oats in a liquid such as almond milk, Greek yogurt, etc.
For this creative overnight oats recipe, I decided to bring strawberries center stage and puree them with Greek yogurt and almond milk and then mixed that deliciousness with rolled oats.
Must-Have Ingredients for Overnight Oats
- Liquid (almond milk, milk, Kiefer, etc)
- Rolled Oats
- Chia Seeds
- Sweetener (maple syrup, honey, etc.)
I like to mix Greek yogurt and almond milk for my liquid. I have found that using rolled oats gives it a much better texture. Chia seeds make everything better and add a healthy dose of Omegas to your meal.
If you don’t use sweet almond milk or flavored yogurt, I suggested a few teaspoons of honey, but that’s just my preference!
Toppings Galore
I am a toppings girl. I love mixing textures. On top of this healthy breakfast, I added sliced banana, strawberries, and chopped pistachios. Feel free to top yours with any of your favorites such as:
- nuts
- seeds
- nut butter
- honey
- fresh fruit

Thanks Mama Linz!
I will be so excited for your cookbook!!! 🙂 I hope you have a good weekend!
Glad to know I’m not the only one excited 😀
Love it! And I agree with Davida. You’re gonna snap and it will be done/perfect/beautiful. You inspire me daily.
Ohhhhhhhhhh stop. You are a machine.
I ate overnight oats ALLL through the winter. This is likely due to the fact that I just do not like my oats hot (unless they are baked…but that’s another story). But you are right…the toppings are the BEST part. I cannot imagine eating mine without nut butter!
Hahaha a girl after my own heart. Love how particular you are when it comes to oats 😀
Haha, SO true! That is definitely a food that I only like a certain way!
Love this… I used to be so shy and afraid to ask for help and as I get older, I realize that is SO IMPORTANT.
Davida has seriously been an amazing mentor – and more importantly – friend to me over the past few months as I get my blog off the ground. She speaks so highly of you as well!! I love making connections with other bloggers! I need to do a better job of reaching out to them more – Davs just found me and it was love!
I’m a huge creature of habit – I always eat oatmeal for breakfast, even when I’m traveling I pack it. I was trying to figure out how to make them with strawberries without tasting sour and this looks like the perfect way – blending! Love the topping ideas too!
What’s not to like about Davida. I have a huge girl crush on her. Hopefully she doesn’t tell you how weird and vulgar I am 😀 I try and keep blog stuff PG 😀
I’m an oatmeal person as well, but I have to admit that mine never look as great as these. Not only do they sound delicious (especially with the toppings and the almond chocolate butter ohmygosh so good!), but look super pretty as well. I love love love your pictures!
And also, you have such a lovely blog and I adored reading your story. Aw, you’re so so strong and inspiring! <3
Hope you have a fantastic weekend! xxx
Having the same breakfast everyday is kind of the best! Lately it’s been having some sort of smoothie! Something about eating out of a mason jar makes it so much better. They’re perfect for to go breakfast like this! Totally loving the combination of flavors in this. I’m all for the toppings 😉 Thanks for sharing, and could not agree with you about the importance of networking! Nice reminder.
Mason jar lovers unite!!!!! And yes we need to connect ASAP. We do live in the same city 😀
Best. Rant. Ever. I truly believe in the power of networking! It’s changed my blog + my life! I hope I get to network with you if you’ll be at FitBloggin or BlogHer this year. Have a great weekend!
Oh boo I won’t be…at least as of right now! When and where are these two (I guess I could google). Are you going on your own dime or do you have fancy schmancy sponsors?!
FitBloggin is in Savannah, GA (I’m already dreaming of peach cobbler!) – and I am speaking so my ticket is comped… but I have still have flight and hotel to pay for. BlogHer is in San Jose, CA and I am paying this one on my own. Didn’t even look into sponsorship – plus, Kerry Washington is part of the keynote (not sure if you are a Scandal fan). It’s my first BlogHer too. Pricey… but I hope to network my butt off!
Can’t complain about location! That is so awesome that you are speaking at FitBloggin. Do they approach you about speaking or do you approach them? I’ve never spoken at a blog conference and would BEYOND LOVE TO! Enlighten me with you knowledge!
Love overnight oats and your little rant.
PS – Thanks for the shout-out. I’m so happy we’ve connected. 🙂
UHM ME TOO! I was just telling Davida how awesome you are! Yay for facebook 😉
I have met SO many new friends from blogging! To be honest sometimes I talk to them more than people in real life 😉 these oats look deeelish! I eat overnight oatmeal every morning. Lately I’ve been using Kefir, after seeing it on FFF! So yummy!
Love keeeeeeeef so much. And I heart you Leigha! love that you started blogging so young…I can’t wait to see what you’re doing in 2 or 3 years!
How much is too much to be paying for blog hosting?
Ha. Ha. I am paying like 150/mo right now with WP Engine. Just transferred to them a few months ago. The support has been really nice and the speed of my website improved. Was recommended by Minimalist Baker 😀
First: YES!! I have become completely obsessed with overnight oats. I had just recently made it and have had it for breakfast (sometimes for lunch at work!) ever since! I love adding new things to it, so I will definitely have to try your version!
Second: I agree 100% with networking…in any job I think it is extremely important. You never know who you will meet and who is willing to help you in anyway they can. I recently went to LA to look at pursuing a career in the entertainment industry and I was able to find some people who were willing to help in the oddest of places, you just need to say hi! 🙂
LOVE THAT! And wow that’s so awesome. Are you planning on moving to LA, then? It takes a lot of balls to approach someone, but totally worth it in the end! LOVE LOVE LOE.
I am planning on moving to LA towards the end of the year!! And yes I agree it takes balls – but stepping outside of your comfort zone can be extremely rewarding at times 🙂
Love these photos! And so extremely true. Meeting people = learning new things = bonus: great friendships! LOVE IT. LOVE YOU!
I learn from you every day my dear! So glad I randomly made your paleo choco chip cookies 6 months ago and we became friends on facebook. #loveatfirstsite
No problemo amigo! It’s so true! I told Kell I’d be harassing her for ecookbook advice too. I have a feeling we may be ranting to each other through the whole process, though knowing you you’ll snap your fingers and it will be gorgeous and perfect while I’m still lying in bed sending you nakey snapchats.
Shhhh. Don’t tell people our secret. First of all I didn’t even know you were writing a cookbook. Second of all I’m so glad we figured out we are basically neighbors to the 6th degree. #itstrue
Bahahaha!!!!
Totally agree 1 million percent. I have met so many wonderful people, that I would genuinely call friends, and I feel like I could actually call or go see (if they werent so far away) if something was wrong. The healthy blogging world is full of wonderful people, you being one of them! I love seeing all the new creations people come up with, this being one of them….sounds delightful….added to my breakfast to do list 🙂
TRUE DAT SISTER! Isn’t it weird how you can connect with people over the internet? I have a handful of friends I’ve never met, but talk to EVERY SINGLE DAY. It’s so crazy. So. I wonder what the world would be today like if Facebook or the Internet didn’t exist!
Lee, I’m SO glad I saw this post before I posted my favorite Friday finds. It’s DEFINITELY going in there! YUM! You know, oats have beoome such a favorite food for me that started out as a “reoovery” stepping stone. Now I could kick myself for going without them so long! I love mine soaked in Silk unsweetened vanilla almond milk overnight too. Have you heard Silk came out with a new Almond Coconut Unsweetened Vanilla blend? Plus it’s carrageenan free- hooray:) Anywho! This recipe is itching to be made in my kitchen, thanks for the inspiration! HAPPY FRIDAY!<3
