These Instant Pot Egg Bites are low-carb, high-protein, and amazing for meal-prep! Here's what you need:
First, use your Instant Pot's sauté feature to cook the spinach, onion, and garlic in olive oil until soft.
Add cooked veggies, shredded cheese, and scrambled egg to each egg bites mold. Then, use the back of a spoon to mix everything together.
Add the trivet and water to your Instant Pot and then place the egg bites mold on top. Pressure cook on high for 10 minutes. When the timer goes off, quick-release.
Serve your Instant Pot Egg Bites with salt and pepper to taste. Store in the refrigerator for up to 3 days for a healthy meal-prep breakfast idea!
