And this rotisserie chicken cobb salad is oh so easy to prep, and oh so delicious all week long! And did we mention it packs 45g of protein per serving? Heck yes!

How to Make Rotisserie Chicken Cobb Salad

Making cobb salad with rotisserie chicken could not be easier! We’ll walk you through each step, so you’ll be off and running with the most delicious lunch to serve a crowd or all meal prepped for the week’s lunches.

Step 1

First, debone and shred a medium rotisserie chicken. Most major grocers will have rotisserie chickens available in the deli section for an extremely affordable price!

Step 2

Next, prepare the hard boiled eggs. Bring a medium pot of water to a rolling boil over high heat. Then, add eggs to the water. Continue boiling for 8 minutes. Remove from boiling water immediately and transfer to an ice bath for 5 minutes before peeling and chopping, and then set aside to mix into your cobb salad in a few steps.

Step 3

Prepare the veggies by halving cherry tomatoes and finely dicing red onion. If you’re using frozen corn, run cool water over the corn until thawed. Step 4

Prepare bacon by pan-frying 4 strips of thick-cut bacon over medium/high heat for around 10 minutes or until your bacon has reached the desired texture. Flip the bacon half way through. Remove excess grease with a paper towel and then roughly chop the bacon. Set this aside with your veggies and eggs.

Step 5

Finally, assemble the chicken cobb salad. Place shredded chicken, hard-boiled eggs, bacon, cherry tomatoes, red onion, and yellow corn into a large bowl. Toss until combined.

Step 6

Pour in Greek yogurt blue cheese dressing and toss one more time. Season with salt and pepper to your liking.

Step 7

How to Make Greek Yogurt Blue Cheese Dressing

Making your own Greek yogurt blue cheese dressing is easy! And this way you’ll know exactly what’s in your dressing ๐Ÿ™‚ If you’re in a pinch for time, or don’t feel like making your own blue cheese dressing, we love OPA greek yogurt blue cheese dressing.

Step 1

First, place all ingredients for the dressing into a small bowl and mix together thoroughly.

Step 2

Use a fork to partially break up the blue cheese into smaller chunks. If you like your blue cheese dressing extra chunky, feel free to skip this step!

Step 3

Add more water as needed to thin out the dressing to your liking. Depending on how chunky the blue cheese is, you may need to add water a couple times, in teaspoon increments.

How to Serve Chicken Cobb Salad

Ingredients 

Cobb Chicken Salad

  • 1 medium rotisserie chicken, deboned and shredded
  • 4 hard-boiled eggs, diced
  • 4 strips thick-cut cooked bacon, chopped
  • 1 cup cherry tomatoes, halved
  • 1/3 cup red onion, finely diced
  • 1 cup yellow corn
  • salt and pepper, to taste
  • 6-8 cups chopped romaine

Greek Yogurt Blue Cheese Dressing*

  • 1/2 cup plain Greek yogurt, any fat percentage works
  • 2 oz. blue cheese crumbles
  • 1/2 teaspoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon water*
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt, or to taste

Was searching for a new idea for rotisserie chicken and my spouse said salad but I wanted something more than a boring one. Stumbled on your recipe through a search and we absolutely loved this Cobb salad. The dressing was incredible, just adjusted to saltiness and consistency. Bonus was this was an easy dinner and the instructions were very clear.
