The Secret to Fluffy Oatmeal
You’re all I ever wanted. You’re all I ever needed. Yeah. That’s what I sang the entire time I ate this oatmeal. This recipe reminds me of college when I first fell in love with oatmeal for breakfast. Banana stovetop oatmeal was my go-to because I knew it would keep me full all day and I could get so much volume out of one serving (thank you chia seeds and extra almond milk). Do you know what the secret to extra fluffy stovetop oatmeal is? Double whipping it with extra almond milk. Once you think it’s done cooking, add a little bit more milk and then keep on stirring! It becomes super voluminous and delicious.What you Need
This recipe calls for rolled oats as opposed to any other kind of oats (steel cut, quick cooking, etc.). Feel free to double or triple this recipe. You may need a little bit extra liquid, but other than that it should be pretty true to the recipe. Here’s what else you’ll need:- Rolled Oats
- Almond milk
- Maple syrup
- Banana
- Chia seeds
- Cinnamon
- Vanilla extract
Why Stovetop Oats?
Why make stovetop oats when you can just make them in the microwave? I know it takes longer to make, but once you make oats on the stove, you’re never going to use the microwave again! Stovetop oats have the best texture. They’re so fluffy and satisfying and they pretty much melt in your mouth with every bite.Topping suggestions

Fluffy Banana Stovetop Oatmeal
Ingredients
- 1 cup rolled oats
- 2.5 cups plain, unsweetened almond milk divided into 2 cups and 1/2 cup
- 2 tablespoons maple syrup
- 1 medium banana mashed
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon chia seeds
Instructions
- Place all ingredients (minus 1/2 cup almond milk) into a medium sauce pan. Turn to high medium/high heat, mix, and bring to a boil.
- Turn heat down to low/medium and simmer for about 5 minutes, stirring consistently until oatmeal thickens.
- Add 1/2 cup more almond milk and mix again. Let simmer for 1-2 more minutes. We call this double whipped.
- Top with walnuts, bananas, and chunks of banana bread.

I love banana bread and oatmeal, so combining them into one breakfast is a great idea. The use of mashed banana for sweetness is a healthy twist too.

This is a dream breakfast for a nursing mama! I love how creamy and flavorful it is. Topped with walnuts and strawberries today, but have used PB and banana bread toppings too.
These were top tier! I just made 1 serve of 40gm oats and some banana essence, and topped with 1/2 banana, 10gm pecans and 5gm coconut flakes. Very tasty and very close to the flavour of banana bread (not the texture of course)

I’m not really a fan of oatmeal unless it’s the junky kind in a packet lol But some recent health issues forced me to eat more bland foods for a few days and I found this recipe during a search. It did not disappoint! I topped mine with a tablespoon of the NuttZo butter and YUM! I had leftovers for work this morning and it was so perfect on a cold rainy day. I made another batch tonight to take to work the next couple days. Really great oatmeal recipe.

So good! I did (admittedly) try it with quick oats because I didn’t have any rolled pats left.. the cooking time was quicker but it still turned out super fluffy! halved the recipe just to make some for myself! Topped with a bit of frozen banana and walnuts and watched my roommate drool as I ate it… such a good recipe for winter!

This is my husband’s and my absolute favorite way to prepare oatmeal. I’ve made it four times already this winter and we’re not regular oatmeal eaters. I like to add a pinch of salt while cooking then top it with sliced bananas, toasted walnuts, flax seeds and almond or peanut butter. Fantastic! Thank you for sharing this great recipe with us. 🙂

Husband said this was restaurant-quality oatmeal – the best oatmeal he’s ever had! And I have to agree – the level of sweetness, along with the texture – A+! I also used a frozen banana & our topping was around 1/4 cup of walnuts. We really enjoyed this – will be in our regular oatmeal recipe rotation! Thank you!
