Protein waffles are a healthy breakfast idea made with whole grains, eggs, and coconut oil, and have 12g of protein per waffle.

Want to know the best part about this protein waffles recipe? It makes 4 GIANT waffles, which means that if you’re cooking for one, for the next 4 days you are guaranteed to get 12 grams of protein in your breakfast. Talk about starting your day off right.

Never ever did we think it would be possible to create a waffle recipe that had 12 grams of protein in one waffle that still tasted so fluffy and delicious. Often when we bake with whey protein powder, baked goods get a little too dense because of the makeup of the whey protein powder.

However, when you use a plant-based protein powder like we use in this recipe, baking with it actually ROCKS! It doesn’t make the end result super thick or dense. You’ll be eating fluffy protein waffles in no time.

What kind of protein powder should I use in protein waffles?

When it comes to protein powder, you can really choose whatever product you prefer. The most important thing is that you like the flavor. Here are some of our favorites to use in protein waffles:

How To Make Protein Waffles

Step 1: Preheat Waffle Maker

Begin by preheating your waffle iron to medium heat.

Step 2: Mix Ingredients

Next, in a large bowl, mix together eggs, almond milk, and vanilla. Then, add in flour, protein powder (Make sure to use a plant-based protein powder! We used Garden Of Life), baking powder and baking soda.

Mix until combined. Then add in melted coconut oil and mix again. Depending on what plant-based protein powder you’re using, you may have to add an additional splash or two of almond milk if your batter is too thick.

Step 3: Cook Waffles

Once your waffle maker is completely heated, lightly spray with non-stick cooking spray (we use coconut oil cooking spray) on both sides.

Then, pour about ½ cup of batter onto waffle maker, close, and flip. Let cook for about 1 and ½ to 2 minutes. Flip waffle maker and open. If it needs a little be more time to cook, close and flip over, let cook for about 20-30 seconds longer.

Step 4: Top & Enjoy

Use non-stick tongs to remove waffle from iron. Let cool for a few minutes because those things are going to be hot!

We topped our waffles with maple syrup and fresh strawberries. And then the next morning,  topped the leftovers with some almond butter and fresh strawberries (we’ll get into how to reheat waffles below!). Here are a few more waffle toppings ideas as well:

How to Freeze Waffles

This is a great recipe to either meal prep for the week or whip up a double or triple batch and then store in the freezer to have on hand whenever the healthy waffles mood strikes ya.

So, how do you freeze waffles?

  1. First, let your waffles cool completely. The reason we do this is so that the waffles can come down to room temperature and stop producing so much moisture (steam). This will prevent freezer burn in the freezer and help your waffles stay nice and fresh.
  2. Then, stack 2 servings of waffles (2 waffles) together. Tightly wrap them in a piece of plastic wrap, in a ziploc bag or in a Stasher bag. Make sure to remove as much air as possible, which will also help to prevent freezer burn.
  3. Place waffles in the freezer and freeze for up to 3 months.

How do you reheat frozen waffles?

  • Option 1: Thaw waffles in the refrigerator overnight. Then, microwave for 60 seconds in the morning.
  • Option 2 (recommended): Cut frozen waffles in half and place in the toaster and toast on medium. We recommend this option as it will give you a crispier waffle, and who doesn’t like a crispy waffle?!

Tips & Notes

  • Almond milk: depending on your protein powder, you may need to add a splash more of almond milk as your batter sits out because it may thicken.

This recipe turned out good, might consider adding some yogurt next time, although I modified a lot๐Ÿ˜‚. I didnโ€™t have wheat flour so I used 1 cup oat flour instead, I also used Rule1 mocha protein powder (because I was in a chocolate mood), and I omitted the vanilla extract because I figured the protein powder was sweet enough. I also only added 1 cup of almond milk and that made my batter too runny so I decided to add an extra cup of quick oats to help soak up the moisture (so I ended up using 2 cups quick oats in total, one blended into flour, the other not). Before cooking I also threw in some dark chocolate mixed with semi-sweet chocolate chips. These modifications ended up making 2 full sized Belgian waffles (although one was enough for me!! freezing the second for later use). I ate one waffle (some before I could even take the pic๐Ÿ˜‚) topped with almond butter, strawberries, chia seeds, and lite maple syrup. Not a bad recipe (especially considering all my changes), would try again!

Thanks so much for the recipe. My go-to protein waffles have recently been https://shop.kodiakcakes.com/collections/toaster-waffles-flapjacks, but since i’ve been at home quite a bit more lately, I have for sure been making things from scratch. Couple questions: Have you used any other protein powders with this recipe? And, if so, how did the texture/taste compare?

Eating these badboys as we speak! AH MAH GASH. Love them! I used regular whole wheat flour and the Tone It Up brand of vanilla protein, and this made 6 waffles for me! Topped with some peanut butter (obviously) and blueberry chia jam for the quarantine brunch of my dreams. I plan to freeze the rest and reheat tomorrow. Thanks for a great recipe, lovely ladies!

I was kind of iffy about these at first, but I have a big can of protein powder to use up before it expires in June and an even bigger hankering for waffles, so your recipe definitely checked all the boxes! I admit I made some substitutions due to what I had on hand – regular flour instead of whole wheat, nonfat cow’s milk rather than almond milk, and vegetable oil instead of the coconut oil, only because I don’t care what anyone says, coconut oil DOES have a flavor and I don’t like coconut at all!

Anyway, I made two versions – plain ones and chocolate ones (same recipe, but I added equal parts cocoa powder and sugar, so 2 tbsp. each and threw in mini chocolate chips and a spoonful of Ovaltine powder too). They were just a little teeny tiny bit dry (I may have just overcooked them), so I might just add more water next time since I used instant milk, but nothing that some sugar-free syrup couldn’t fix! These were simple and delicious! I’ve eaten them for breakfast the past two mornings and snuck a couple wedges out of the freezer for dessert too (chocolate waffle + whipped cream + chocolate sprinkles). Maybe my version isn’t all that diet friendly, but I was pleasantly surprised by how nicely these turned out.

I think I have some almond flour in my kitchen somewhere and might like to try using that instead of white flour to see what happens. I think I’d like to try making the chocolate ones again with chocolate milk for an extra boost of flavor. ๐Ÿ™‚

I had to tweak this recipe to use what I had on hand, so I substituted milk and oil for the almond milk and coconut oil. Turned out great and my kids are eating them!

I have FINALLY found a good healthy waffle recipe that actually taste good and is filling. Thanks so much! I froze mine and was bummed that they wouldnโ€™t fit in my toaster so need to get me oven toaster but even microwave they held up. Little peanut butter and sugar free syrup and I was good.
