Growing up, I lived next to my best friend, Courtney. Courtney’s mom always made the best strawberry🍓 spinach salad with poppyseed dressing from Bob’s Produce (a local grocery store in Minnesota). It was always a perfectly balanced salad because it was both sweet and savory.

This homemade poppy seed dressing is an ode to that Bob’s produce dressing and to Courtney’s Mom, Mary.❤️

Today we’re showing you how to make this healthy salad dressing recipe in under 10 minutes. Cuz why wouldn’t you want to top your kale salad or strawberry spinach salad with this goodness?

Homemade Poppy Seed Dressing

This healthy poppy seed dressing is a combination of a vinaigrette and a creamy dressing. What I mean by this is that we used a good amount of olive oil as the base and then added a few tablespoons of Greek yogurt to thicken things up.

Don’t worry, there are plenty of other amazing flavors in this dressing to really give that salad of yours some oomph. Here’s what you’re going to need:

  • olive oil
  • Greek yogurt
  • lemon juice
  • apple cider vinegar
  • honey
  • poppyseeds
  • salt

The tang of ACV and lemon juice mixed with honey makes me hungry. The nice thing about this simple salad dressing is that all you have to do is place everything into a mason jar, close the lid, and shake! You’ll have this lemon poppy seed salad dressing ready in no time!

Ingredient Substitutions

There is always room to substitute some ingredients if you are running low on pantry items or if you prefer something else. Check out some easy substitutions below.

  • Olive oil –> grapeseed oil
  • Greek yogurt –> buttermilk
  • Apple cider vinegar –> a combination of white, red wine vinegar, etc.
  • Honey –> you can use agave syrup or a bit of granulated sugar
  • Poppy seeds –> no poppy seeds, no problem. You can use chia seeds, too.

Homemade Poppyseed Dressing

Ingredients 

  • 1/4 cup olive oil
  • 2 tablespoons plain, nonfat Greek yogurt
  • 1/2 tablespoon lemon juice
  • 1/2 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • 2 teaspoons poppyseeds
  • 1/8 teaspoon salt

Instructions 

  • Place all ingredients into a mason jar. Then, screw the lid on and shake until fully combined.

  • Refrigeration: Will stay in your refrigerator for up to 3-5 days.

I have been using this Poppyseed dressing since saw on think a FitFoodieFinds show. I love it and also add other things like shredded cheese, cooked chicken and avocado. My problem was took me almost year to find the poppyseeds. Nobody had! There are two made that are delicious to use for days when you don’t feel like cooking! They are Marie’s and Bolthouse Farms at Albertsons.

I’m in love. Been making this twice a week. Usually rotate my lunch meal prep but have had spinach salad with tons of fresh fruit and sliced turkey for 2 weeks now just to make and eat more of this dressing. Just finished meal prep for week #3. Also use your blue cheese dressing for my veggie snacks each day and made fat bombs today as well. They are in the freezer with 11 mins to go.

Sounds yummy….but Iโ€™m lactose intolerant. Any suggestions for a replacement of the Greek yogurt?
