I used to restrict my diet and cut out certain food groups that were higher in fat and calories because I didn’t think they were “healthy.” Finally, I got a grip and reminded myself that whole grains aren’t the devil and that it’s okay to eat ice cream.

Now, instead of obsessing over restaurant visits or binging for dinner because I am too stressed to take a breather and make something healthy, I meal prep. That way I have no worries and I get to eat delicious meals without stress.

Reasons to Meal Prep

Accessibility – I love having accessible, healthy, and delicious meals ready to eat after a long day of work.

Structure – I am a creature of habit, but because my job can be so sporadic, meal prep helps give structure to my week.

Intentional Time – I know that Sundays or Mondays are my meal prep day. Setting time aside to meal prep really slows me down and allows me to be intentional about my time and what I put into my body.

Healthy Snacking – I love to snack. Meal-prepping healthy snacks encourage me to snack healthy throughout the day.

Loving that you realized whole grains are the devil and itโ€™s ok to eat ice cream. It took me a while to get to this point too. As soon as I let go and stopped obsessing but made sure to eat healthy Whole Foods Iv never been happier or felt that Iv looked better. Love the meal prep ideas! Thank you for sharing.

I’m thrilled to have found this website, I love it so much already! I’ve looked at the recipes for Desserts and see that you use Unsweetened Almond Milk for most of them. My question is would it be ok to use Unsweetened Almond Milk with Coconut? Not sure if you have actually tried this out? Look forward to hearing from you. ๐Ÿ™‚

I tried your recipe today sneaking in “healthy”for my family. I found my new go to in a pinch dish. Especially since my family loves Mexican dishes and it doesn’t have to be laden in calories.

My new best friend is my InstaPot! So instead of using the slow cooker I popped it in the InstaPot on High for 30 min and it comes out infused with flavor and tender and easily shreddable! Just like it has cooked all day!

Stella, you have to go out and buy you a InstaPot or any of the new pressure cookers. It makes meal prep a cinch. No I am not getting paid to promote it… I just love how much time it saves since I got mine. Dishes turn out beautifully infused with flavor like you cooked them all day.

Casseroles are one of my favorite things to make before a busy week. For the most part they’re usually pretty easy to make and they end up being quite a few meals.
