Okay, it’s BLT time. We nixed the bread, added some quinoa, and used lettuce as a wrap to create a healthy take on a BLT — BLT QUINOA LETTUCE WRAPS. 

If you want to enjoy the deliciousness of BLT sandwiches without the bread, then you’ll love these BLT quinoa lettuce wraps. With protein-packed quinoa, juicy tomatoes, crispy bacon, and homemade ranch, these wraps are the perfect easy dinner or appetizer for when summer rolls around. 

What You Need for these BLT Quinoa Lettuce Wraps

  • Bacon: use any kind of bacon you like. If you haven’t tried baking your bacon yet, now is the time. Way less cleanup and PERFECT bacon every time!
  • Lettuce Cups: we used bib lettuce for this recipe as it’s super buttery and is already in a rounded shape, perfect for this recipe. 
  • Tomatoes: we used medium tomatoes, but cherry tomatoes or grape tomatoes would also be good. 
  • Quinoa: use any brand of quinoa you like. Check out how to cook quinoa for the perfect quinoa every time. 
  • Homemade Healthy Ranch: made with buttermilk, Greek yogurt, lemon zest, vinegar, and classic ranch spices. It’s the perfect topping for these easy wraps!

How to Store BLT Wraps

Store the quinoa, toppings, and lettuce separately in the fridge for 3-4 days. 

Reheating Instructions

Reheat the quinoa in the microwave or in a large skillet over medium heat until warm. Add a little water or stock for moisture.

Ingredients 

  • 8 strips of bacon
  • 8 butter lettuce cups
  • 4-6 medium tomatoes, sliced
  • 1/2 cup quinoa, uncooked
  • 1 cup water
  • 1/2 cup homemade healthy ranch

Instructions 

  • Preheat oven to 425ºF and line a cookie sheet with tin foil.
  • Prepare bacon by placing all 8 strips on cookie sheet. Season with pepper and place in oven at 425ºF for 15-20 minutes depending on how thick your bacon is and how crispy you like it!
  • Prepare quinoa by placing 1/2 cup of quinoa and 1 cup of water in a small pot. Bring to a boil then reduce heat to low, cover, and let simmer for about 10 minutes or until all water has absorbed. Let cool.
  • Assemble BLT Lettuce Wraps by placing a few tablespoons of quinoa, 1 strip of bacon, and 3 or 4 slices of tomato on top. Last, finish off with a few teaspoons of homemade healthy ranch!

Quinoa is so delicious. Wonderful. But it’s a pity that I haven’t been able to enjoy them.
