Fajita Breakfast Casserole Ingredients

For this easy casserole, all you need are a few simple ingredients that you may already have on hand! And the prep work is super minimal as well. All you have to do is chop your chicken sausage, peppers, onions and potatoes into bite-sized pieces, and then everything cooks in your casserole dish. Here’s what you’ll need:
  • 1 medium Idaho potato
  • 1/2 medium jalapeño
  • 2 tablespoons fajita seasoning (we’ll get to this in a sec!)
  • 10 large eggs
  • 1/4 cup unsweetened almond milk
  • 6 links precooked chicken breakfast sausage
  • 1 medium red pepper
  • 1 medium green pepper
  • 1/2 medium white onion
  • 1/3 cup shredded Colby jack cheese

Homemade Fajita Seasoning

Ditch the store-bought fajita seasoning packet and make your own at home! We love making fajita anything, but so often forget to pick up a fajita packet from the grocery store. There’s nothing worse when you’re about to make some chicken fajitas or this breakfast casserole and and you have no fajita seasoning at home to use. No fear, making your own fajita spice mix in your own kitchen is so simple! You need 6 basic spices (that you probably already have on hand), and a cute little jar to house your spice mix. Plus, this homemade fajita seasoning doesn’t have the fillers that you’ll commonly find in store-bought mixes. Here’s what you’ll need:
  • chili powder
  • ground cumin
  • garlic powder
  • paprika
  • salt
  • pepper

How To Make the Perfect Fajita Breakfast Casserole

Step 1

First, preheat oven to 400ºF and spray an 8-inch by 8-inch baking dish with nonstick cooking spray. THIS is our go-to square baking dish in the Fit Foodie Kitchen.

Step 2

Then, dice your potatoes (we used Idaho potatoes for this recipe, but feel free to sub for any potato you have on hand!) and mince jalapeños. Place in baking dish and drizzle with olive oil. Lightly season with 1/2 teaspoon fajita seasoning, and bake at 400ºF for 10 minutes. chicken fajita breakfast casserole ingredients

Step 3

While the potatoes are baking, whisk together 10 eggs and 1/4 cup of almond milk (feel free to sub for your preferred un-flavored milk). Set aside. Then, prepare your peppers and onions by dicing finely.

Step 4

Once your potatoes and jalapeños have roasted for 10 minutes, remove from the oven and turn down to 350ºF. Add the rest of the veggies to the baking dish and season with the rest of your fajita seasoning. Toss to evenly coat everything in your fajita seasoning.

Step 6

Place in the oven and bake at 350ºF for 40 minutes. Then, add cheese and bake for another 5 minutes. chicken fajita breakfast casserole ready to be cooked

Ingredients 

  • 1 medium Idaho potato, diced into 1/2-inch chunks
  • 1/2 medium jalapeño, minced (~1/2 tablespoon)
  • 2 tablespoons fajita seasoning, divided
  • 10 large eggs
  • 1/4 cup unsweetened almond milk
  • 6 links precooked chicken breakfast sausage, chunked (4.5 oz.)
  • 1 medium red pepper, finely diced
  • 1 medium green pepper, finely diced
  • 1/2 medium white onion, finely diced
  • salt and pepper to taste
  • 1/3 cup shredded Colby jack cheese

Instructions 

  • First, preheat oven to 400ºF and spray an 8-inch by 8-inch baking dish with nonstick cooking spray.
  • Then dice potatoes and mince jalapeños. Place it in a baking dish and drizzle with olive oil. Lightly season with 1/2 teaspoon fajita seasoning. Bake at 400ºF for 10 minutes.
  • While the potatoes are baking, whisk together 10 eggs and 1/4 cup of almond milk. Set aside. Then, prepare peppers and onions by finely dicing.
  • Once the potatoes have roasted, remove from oven and turn down to 350ºF. Add the rest of the veggies along with the sliced breakfast sausage to the baking dish and season with the rest of your fajita seasoning. Toss to evenly coat everything.
  • Pour the egg mixture on top of veggies and mix until combined.
  • Place in the oven and bake at 350ºF for 40 minutes. Then, add cheese and bake for another 5 minutes.
  • Remove and let cool for at least 10 minutes before slicing and serving.

Storage: will stay in the refrigerator for up to 4 days.

Just noticed when making this that the recipe calls for chicken, but in the instructions, it doesn’t say when to add the chicken. I’m going to add it in with the eggs and fajita veggies. Wish me luck lol

45 minutesias waayyy too long. I only purchased it in for 35 and my eggs and the edges of the onions were burnt.
