Super Juicy Baked Boneless Chicken Thighs

You’re going to absolutely love these super flavorful and juicy baked boneless chicken thighs. They’re marinated in an amazing homemade buffalo sauce for at least 2 hours, but then bake to perfection in just 12 minutes. We’ll show you how to make them step by step ๐Ÿ˜€

High protein: chicken thighs, of course, come from the thigh of the chicken and are a dark cut of poultry. Because of this, it is a fattier cut of meat but pack great protein and flavor.

Ingredients – What You Need

CHICKEN

  • For this recipe, we used boneless, skinless chicken thighs, but if you’re hoping to use bone-in thighs or boneless breasts, we have some recommendations on how to do so below!

Buffalo Sauce

Our buffalo sauce for these baked boneless thighs comes together in just 4 ingredients. You’ll need:

  • Buffalo sauce: We love Frank’s Red Hot, but any buffalo sauce will do.
  • Melted butter: Marinating these boneless thighs in melted butter will make them ohhhhh so juicy. Don’t skip this!
  • Honey: this will cut the heat from the buffalo sauce a bit with the perfect amount of sweetness.
  • Salt & pepper: a classic seasoning to round out this sauce.

How to Make Baked Boneless Chicken Thighs

Make Buffalo Sauce

Heat a small saucepan over medium/low heat. Add the butter to the saucepan. When the butter has melted, remove the saucepan from the heat and add the buffalo sauce into the saucepan, whisking constantly until the melted butter and buffalo sauce are combined. 

Add the honey into the saucepan and whisk until the honey is dissolved. Finally, whisk the salt and pepper into the buffalo sauce. 

Add Buffalo Sauce to Thighs

Pour half of the buffalo sauce over the chicken thighs in a Ziploc or other container. Roll the chicken thighs around until they are all covered in the sauce.

Let Chicken Thighs Marinate

Cover the chicken and place in the refrigerator and let the chicken marinate for at least 2 hours or up to 6 hours. Then, remove the chicken from the refrigerator and let it come to room temperature. 

Bake Chicken Thighs

Preheat the oven to 425ºF and line a baking sheet with parchment paper or tin foil. Place the chicken thighs flat on the lined baking sheet and bake the chicken thighs for 10 minutes. 

Remove the chicken thighs from the oven and brush the chicken thighs with the remaining buffalo sauce. Place the chicken back into the oven for an additional 10 minutes. 

Broil Chicken Thighs

Turn the oven to broil and broil the chicken thighs for 1-2 minutes or until the top of the chicken thighs begin to caramelize. Don’t skip this step!

size matters

Chicken thighs can vary greatly in size and thickness. The goal is to get the internal temperature of the chicken to be 165ºF. So, if you have larger boneless thighs, you may need to cook a bit longer to reach a safe temperature.

Let Rest, Then Enjoy!

Let the buffalo chicken rest for 10 minutes and then serve with a side of ranch or blue cheese and your favorite sides.

How do I know when my chicken thighs are fully cooked?

The best way to know if your chicken thighs are fully cooked is to use a meat thermometer. Make sure that the internal temperature of the thickest part of the chicken is 165ºF.

Can this recipe be made with bone-in chicken thighs?

This recipe absolutely works with bone-in chicken thighs. We recommend increasing the bake time to around 20-30 minutes depending on the size of the chicken thighs.

Ingredients 

  • 1.5 lbs. boneless skinless chicken thighs
  • ¼ cup melted butter
  • ½ cup buffalo sauce
  • 1/2 tablespoon honey
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • For serving: ranch/blue cheese

Instructions 

  • Place the chicken thighs into a Ziploc bag or a bowl. Set aside.
